    Let's "do" lunch

    We are always peeking into what one another is making for dinner but I want to know what you like to eat for lunch.

    For me it is usually a salad, homemade soup or leftovers from the night before. Since today is a cool day, I am making

    Creamy Ham and Asparagus Soup

    What are you having?

    I usually have salad with homemade dressing for lunch (today is Catalina), plus some fresh fruit and/or veg (tomato and cantaloupe) - the plan is to keep my breakfast right around the number of calories I burn on our morning walk (usually +/-350), and lunch is about 200 calories. Then I can eat a proper dinner, and, if I'm lucky, ice cream (well, usually frozen yogurt, but still). Or a peach tart. icon_wink.gif

    I'm TRYING to drop some of the 40# I gained when I quit smoking (nearly 8 years ago!) (plus an extra 10 that's evidently keeping it company icon_sad.gif ), and, it seems that the best way to do it is to eat fewer calories. Go figure. icon_rolleyes.gif

    So far, I've lost 20# - so maybe I'll be in shorts by next summer after all. icon_wink.gif

    I'm around pasties all day at my shop, so I rarely want to have one of those. Today my soups are Vegetarian Chili - which I LOVE, and a new one I've never made before, Salmon Chowder. Which is smelling wonderful. So, I will probably be having the chili. Some days it is really hard to eat any of the foods that I cook, only because I have to do it so often, and I have to make so much.

    I rarely eat lunch. I have never really ate 3 meals a day.
    I eat cottage cheese, yogurt, fruit usually for breakfast. Sometimes 1/2 bagel or English Muffin.

    So, lunch if any, is cheese and crackers; maybe some frozen grapes; 1/2 sandwich with a slice of turkey and cheese; a small cup of soup.
    If I have leftovers, it is usually a early lunch, but no breakfast other than some fruit.

    I could never eat 3 full meals a day.
    During the winter, I do like a small bowl of oatmeal in the am; but then, a light lunch.
    I love to have tuna or chicken salad on hand. I can have a few crackers with that and be happy.

    When eating at home, lunch is usually whatever is left from the night before. If no leftovers I love PBJ and a glass of cold milk. Guess I'm just a kid at heart. icon_lol.gif

    I had a big salad, with homemade vinaigrette, and left over crumbled rainbow trout, with a few capers, strewn over.

    This was my lunch today: icon_biggrin.gif
    I raided my fridge and found some mixed lettuce greens,and vine ripened tomatoes.
    I also found some orange and yellow peppers which I sliced very thin.
    Fried up some slices of bacon. Topped all that with a zesty Tuscan Italian salad dressing.
    And added shredded Sharp Cheddar Cheese along with garlic & cheese croutons.

    I wish someone would make me a salad, I HATE making salads, hate it. All that chopping and tearing GRRRRRR.

    I'm having leftover Tic Tac... Taco Soup #147 YUM!

    What she said. If I have no leftovers it is usually some scrambled eggs tossed with whatever veggies I have that need to be used up.

    Or a pimiento cheese sandwich. I usually have some in the fridge. icon_redface.gif

    Krislady - excellent job on the weight loss and kudos to you for quitting smoking, that is HUGE!

    Today I had cukes and tomatoes in a homemade italian dressing topped with cubed feta. Fresh and yummy!
