    This Challenge showcases the Vegetarian/ Vegan Cooking Forum



    I am sure we have all heard of vegetarian diets. Vegetarians eliminate fish, meat and poultry. A vegan diet is much more restrictive. Vegan's eliminate all animal products from their diet. This includes dairy and eggs as well as products made from lard, margarine made with whey, and anything with gelatin, which comes from animal bones and hooves.

    Fruits, vegetables, leafy greens, whole grains, nuts, seeds, and legumes become the staples in a vegan diet. For a balanced vegan diet one should typically aim for 6 servings of grains, likely from bread and calcium-fortified cereal; 5 servings of legumes, nuts, and other types of protein, like peanut butter, chickpeas, tofu, potatoes, and soy milk; and 4 daily servings of veggies, 2 servings of fruit, and 2 servings of healthy fats, like sesame oil, avocado, and coconut, according to an American Dietetic Association guide. There’s also no need to give up dessert: Vegans can eat baked goods (cupcakes and cobbler, for example) made without butter, eggs, or albumin.

    A vegan can be a challenge when hosting a party. Your team has carefully planned a wonderful menu for the wedding and at the last minute you discover there are several guests who are vegan. What will you do? You want to be good hosts and hostesses.


    Start Date: July 14
    End Date: July 27 deadline midnight Zaar Time
    Challenge: Individual Cooking Challenge (3 players)
    Points: 5 points individual challenge


    1. Each team member will select a different recipe from the menu from the team wedding menu that was posted in the ZWT 9 -- My Big Greek Wedding Challenge.
    2. The recipe should be made and plans made to adjust the recipe to fit vegan dietary restrictions.
    3. Post in the thread how the recipe should be modified. In the post include any interesting links you found that helped to modify the recipe and any products you found helpful; i,e., egg and dairy substitutes, protein replacements, etc.
    4. Review the recipe.


    Please remember to:
    ~ Post your Recipe Selection in this thread (Include your team name)
    ~ Prepare the recipe and post your review and photos (if any were taken) as
    usual to the recipe.
    ~ Post your completion in this thread. (Include your team name)

    Hi Paula. Great challenge! Question.. should the recipe be made with the vegan adjustments and reviewed as such? If not, could it be? I'm currently doing a vegan diet for the next few weeks. Thanks.

    Yes. The recipe needs to come from your team's menu for the Wedding Challenge. Tell how it was modified, etc. HTH

    I understand that the recipe needs to be made and we need to indicate how it would be modified so the vegan guests could enjoy it; however, can we make it for our families *without* the modifications and still get credit?

    Debbie R., the one thing I can tell you is that the review should be reflective of a vegan made recipe. As a side note, I don't do precise measurements when cooking and I often make a few changes here and there. Also, I promise not to show up at your house and look over your shoulder. icon_smile.gif

    For our team, I will be preparing Stuffed Greek Onions #472306 (which will be a part of our wedding menu, although that challenge is not complete at the moment)

    In order to make this vegan, I did a google search for "Feta substitute" which brought me back to 'zaar and Mock Feta Cheese ( Vegan Substitute ) #118182.

    (I also found a substitute for goat cheese: http://thekindlife.com/blog/post/vegan-goat-cheese-recipe)

    Since other sources say to just substitute pureed tofu with herbs for the goat cheese, so I would probably just use the 1st substitute so I didn't have to prepare 2 separate faux cheese recipes.

    The other ingredients are already vegan: onion, olive oil, currants, pine nuts, salt and pepper.

    I need to actually make this recipe and post in this thread when it is complete in order to finish the challenge, right?

    For our team, I prepared Stuffed Greek Onions #472306



    In order to make this vegan, I did a google search for "Feta substitute" which brought me back to 'zaar and Mock Feta Cheese ( Vegan Substitute ) #118182 which can be used as a replacement for both cheeses. (The other ingredients were already vegan: onion, olive oil, currants, pine nuts, salt and pepper.)

    I scaled the recipe down to only make 1 serving, but I wish I had made a full batch because this was amazing! icon_smile.gif
