    Menu for Week of August 3 through August 9, 2013

    Hi menu pals!!! It's full blown summer, but our weather has been pretty mild here. Loving it!!!!

    This coming week I'm trying to get more ZWT recipes made and it's also my birthday! So my boys will be making me dinner one day. Maybe this weekend, or maybe next. We'll see.

    We don't have anything planned for the summer so we're taking it as it comes.

    Here's my menu for the week. Share yours!!

    Saturday - Tropical Chicken Sandwiches and whatever the farmers' market has

    Sunday - maybe my birthday dinner, but I'd also like to make Aebleskiver (Danish Pancake Balls) and Peach Mango Smoothie

    Monday - Dilled Potato Bread (Abm), Danish Pork Frickadeller or Royal Swedish Meatballs With Parsley Dressed Carrots

    Tuesday - Cuban Ropa Vieja and Jamaican Rice and Peas

    Wednesday - my birthday!!! Making my DH take me to Farrell's!

    Thursday - Niku Jaga (Japanese Beef Stew in the Crock Pot) (didn't get made this week)

    Friday - leftovers or out to eat

    Friday: Veal and Mushroom Stew and for dessert Banana Coconut Cake
    Saturday: Healthy Crispy Fish Sandwich With Pineapple Slaw w/Mango-Berry Delight
    Sunday: shrimp and pineapple kebabs
    Monday: Carne Guisada III (but not sure if I'll be able to find the seasoning and sauce mentioned)
    Tuesday: pizza
    Wednesday: Caribbean-Style Chicken Sandwich and Sweet Georgia Peaches and Cream Popsicles
    Thursday: Hungarian Sweet 'n' Sour Cabbage Soup

    those meatballs look like they would work out well here! Saved and hope to make soon!

    Happy August Everyone!
    Well, it has been a rough couple of weeks. My son has some pretty scary medical issues (tests for now), will know more next week, I have lost 90% on my data, 2 computer crashes, and 1 week without them, dental issues; and have over 10,000 to be done, insurance doesn't cover it; and, filling in for a friend at work ... 70 hrs last week. I'm exhausted stressed, etc. So, taking advantage of leftovers, freezer items, and grilling to make it easy.

    Grilled whole snapper, with a lemon garlic oil, stuffed with lemon, onion, and dill; rosemary grilled potatoes; and a creamy onion radish salad

    SUN ...
    Lady #4:
    - Turkey patties w/mushroom onion sauce; mashed parsnips; salad w/heirloom tomatoes
    - Creamy corn enchiladas with a green sauce; mixed fruit salad
    - Roasted turkey breast w/apricot glaze; grilled asparagus; sweet potato
    Me: Fritatta from the freezer; cauliflower/zucchini soup; fruit

    MON ...
    Me: Fish sandwich (left from Sat) topped w/slaw; curly fries, and fruit

    TUES ...
    Baby back ribs; pasta alfredo; corn on the cob

    WED ...
    Lady #1: Turkey patties w/mushroom and onion sauce; mashed parsnips; mixed greens w/heirloom tomatoes
    Lady #2: Grilled jerk chicken; spicy Caribbean rice; corn on the cob; fruit
    Me: Take out w/friends. A new place that sells meals to go. But, it is all organic, natural, and health conscious. My one friend is a writer and doing a write up on the place, so ... FREE dinners.

    THURS ...
    Me: Something w/leftover ribs; slaw, salad, or fruit (whatever looks good)

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD
    Me: Grilled chicken over leftover pasta alfredo; tomato olive salad or veg

    Thx C, I vented a bit. I'm fine ... baby steps, and one day at a time. I don't worry too much, I'm pretty realistic, and try to just go day by day. But, when it is your kids ... you got to worry. Hopefully, we will find out more soon.

    Work keeps me busy, which is a good thing

    Hey all. Back from vaca--Charleston, SC & a couple days in FL with stepson.
    Great time but glad to be back home. Here is the plan for Mon-Fri:

    Mon: Chuckwagon Chili, cornbread, and salad

    Tues: Creamed Chicken and Vegetables over biscuits and salad

    Wed: Lasagna in a Bun and salad

    Thurs: Linguine with Salmon and Mushrooms, salad, and Buttermilk Pie

    Fri: Bean Burrito Casserole, steamed broccoli, salad, and Pink Sangria Tea

    Lunches: Black Bean and Couscous Salad & The Best Pasta Salad

    Breakfast: Breakfast Bagel Sandwiches (Oamc)

    Snacks: Incredible Chocolate Fudge (for brother) & Spinach Artichoke Dip

    SC, I do hope things get easier for you. The dental thing is awful with insurance. My sister had an accident and broke her jaw in 3 places and had many broken and lost teeth --- but since her teeth are involved they are trying to claim that it is not covered b/c "dental work" when actually it is so much more than that and should be covered under medical. Crazy.

    We had a violent GI bug here last week, so we did not have many of the planned meals. So nothing much new here. I also think those lasagna buns sound good ... not exactly fine dining but guaranteed to be yummy and that is probably more important.

    Sat – date night! perfect weather again on the ped mall; great people watching during dinner

    Sun – Swiss national day celebration (cookout at inlaws with weisswurst and other authentic wurst); I made an “herby” potato salad with purple, red, and yellow fingerlings and a mix of basil, dill, tarragon, and parsley (the dill I bought came in an enormous bunch so I found a recipe for a Dill Pesto, which I made and froze)

    Mon – mix of leftovers to use odds and ends

    Tue – DH away, probably omelet for me

    Wed – garlic shrimp with asparagus

    Thu – tuna melts in tortillas

    Fri – fish with leftover pasta with leftover kale pesto, along with maybe green beans
