    Upon a visit to any open-air market in Morocco or Tunisia, you will notice stall after stall of the most brilliantly colored bins of spices. Spices are a critical component of any North African meal and are also known to have medicinal value as well. The aromatic and delightful taste of Moroccan and Tunisian cuisines is due to the various spice combinations. The ten most important spices to Moroccan cuisine are: cayenne, cinnamon, turmeric, ginger, black pepper, anise, sesame seed, cumin, paprika and saffron.

    Unlike other North African cuisine, Tunisian food is quite spicy. A popular condiment and ingredient which is used extensively in Tunisian cooking, harissa is a hot red pepper sauce made of red chili peppers and garlic, flavored with coriander, cumin, olive oil and often tomatoes. Tunisian culinary ingredients includes the following spices ~ - garlic, anise, saffron, cinnamon, caraway, coriander, cumin, fennel, fenugreek, ginger, white pepper, black pepper, red pepper and cloves.



    Ras El Hanout is a complex, aromatic Moroccan spice blend. Most recipes include cardamom, nutmeg, anise, mace, cinnamon, ginger, various peppers, and turmeric, but 30 or more ingredients might be used. Harissa is typically prepared by grinding together whole spices, dried roots and leaves, but this recipe can be made by using ground spices. Ras El Hanout's literal translation from Arabic is "head of the shop" implying that it's "the best (or top) of the shop".



    Both cuisines are known for their use of herbs such as parsley, cilantro and mint. Fruits and nuts also adorn North African dishes as well. The cuisines of both Morocco and Tunisia are vibrant and colorful and boast the use of olives, dates, dried apricots, almonds, walnuts, preserved lemons and rose water.

    The cuisines of Morocco and Tunisian enjoy seafood, lamb, poultry and a wide range of vegetables.

    Couscous is a traditional dish which is cooked by steaming. It is generally served with a meat or vegetable stew spooned over it. Couscous is a staple food throughout the North African cuisines. Properly cooked couscous is light and fluffy and it is traditionally cooked in a food steamer called a "kiskas". The base is a metal pot where the meat or vegetable dish is cooked and on top of the base is a steamer where the couscous is cooked. The lid to the steamer has holes around it's edge so steam can escape.

The recipe must include a minimum of three (3) spices listed above. Please post your recipe selection, the three spices that will be showcased in your dish, your completion and any photos in this thread. Please also post this information in your team thread.

    Om, nom, nom... Wait, I should be posting this to the challenge board! Sorry, couldn't help myself - this "marinade" is so good that I stopped and had some on cream cheese and crackers. icon_eek.gif
