    ZWT #9 - All Players Cookbook - Cajun/Creole

    New Orleans is known for its great cuisines. In this challenge, we’re going to explore two of its famous breads – Beignets and Bread Pudding.


    One of the world's great carbohydrate indulgences is a beignet. Although the French word "beignet" (pronounced "ben-yay") merely means fried dough, the actual creation tends to be more diverse than the American doughnut. The most classic version of a beignet consists of a fried square of dough, which may or may not be frosted, but is typically dusted with liberal amounts of confectioner's sugar.

    One of New Orleans' star tourist attractions is Cafe du Monde, a 24-hour French Quarter cafe that serves only two items: chicory-infused coffee and beignets. The beignets are square shaped, have no hole, and come three to an order under a signature pile of powdered sugar. They are often paired with cafe au lait - a 50/50 mix of milk and bold coffee with chicory and are the official state doughnut of Louisiana.

    Bread Pudding

    When most bread goes stale it gets tossed in the trash or fed to the birds. But for some frugal cooks, stale bread is just the beginning of a transformation into bread pudding - the heavenly dessert that is the grand finale at Creole restaurants across New Orleans.

    Though its roots go back centuries to the thrifty domestic kitchens of Europe, the distinctively Southern-style bread pudding is a dessert New Orleans has embraced and made its own.

    Bread pudding is a featured item at many restaurants in the French Quarter. Sometimes the menus will use the old Creole name pain perdu - or "lost bread," a reference to the main ingredient's stale status before its sweet transformation.

    K-Paul's Louisiana Kitchen, home base of the famous Cajun chef Paul Prudhomme, makes its traditional bread pudding using a mixture of breads and paired with a rich chantilly cream sauce. Guests at Arnaud's and Broussard’s have been finishing off meals with bread pudding since each restaurant was opened more than eight decades ago. At Dickie Brennan's Steakhouse meals are often finished with a rendition of bread pudding that brings in elements of another New Orleans classic: bananas Foster. In this dish, bananas are baked into the bread and sliced over the top in the rich, sweet sauce.

    And of course, NOLA - the French Quarter outpost of Emeril Lagasse's culinary empire - serves the famous chef's white chocolate bananas Foster bread pudding. This triple treat comes with a rum-based sauce from the classic bananas Foster recipe, is drizzled with fudge and can even be had a la mode with a scoop of "drunken monkey" ice cream - which has plenty of white chocolate, bananas and rum on its own.
