    Whole Chicken

    it's HOT. I defrosted a whole chicken.. was toying w/arroz con pollo, but, you all have anymore suggestions?

    When its hot, I don't cook indoors....either spatchcocked grilled chicken, or beer can chicken come to mind:

    It's always hot in FL. Why we have AC ... but when it is HOT inside, like me with NO AC for 10 days ... I always hit the grill.

    As mentioned beer can chicken, or split in half and cook with a brick. I usually marinate if possible, but a good dry rub is always good. Add some grilled corn or asparagus and dinner.

    However, I always make rice right on the grill, so arrozo would work for me.

    Thanks, I always forget I have a pressure cooker too! Only way I knew how meatloaf was cooked till 1982 !

    I spatchcocked the 6 lb'er and brining tonight.. not sure of the seasonings yet though. Maybe the new McCormick stuff I tested a few months ago.. it's awesome!
