    Hello menu peeps!!!!
    I got good news on my niece yesterday!!!! Even though she is still unconscious and on a ventilator, they believe she will recover!!!! It will be a very slow process. Prayers worked!!! Yay!!!!
    Nice to feel like the sky is blue again icon_biggrin.gif

    This coming week seems like it will be mild as far as activities go. My youngest DS is going to Arizona to play baseball with his travel ball team. Sniff sniff...it's his first road trip!!

    So here's my menu for the week:

    Saturday - Something on the grill - gonna make my final decision after going to farmer's market in the morning. Might try a brown rice Greek salad to accompany.

    Sunday - Taquitos using leftover meat in freezer with rice and beans

    Monday - Jacklyn's Crazy Voo-Doo Cheese Enchiladas with leftover rice and beans and salad

    Tuesday - Crock Pot Mongolian Beef - didn't make last week.

    Wednesday - a variation of Creamy Avocado Pasta with salad

    Thursday - Open for stretch

    Friday - out to eat!

    Sorry to hear about your niece -- hope she'll be okay.

    Last two weeks were busy - embroidery seminar and everything else in the world it seemed! I need a calmer week and I think this one will be calmer and hopefully quiet enough to get things done.

    Friday: Pulled Pork (Crock Pot) on rolls and with chips and coleslaw
    Saturday: Chili Scallop and Shrimp Kebabs w/ fruit salad
    Sunday: porkchops, potatoes and corn
    Monday: Skinny Cowboy Cookies
    Tuesday: pizza night
    Wednesday: sandwiches
    Thursday: meatloaf

    C - so glad to hear she in on the road to recovery. Slow or not, at least that is good news.

    Nothing much here. One (1) week and counting without AC is not fun; 89 in the house and 90%+ humidity. NOT fun, long story. Pretty sos week for me; but looking for a weekend away soon and a road trip too.

    Like the mongolian beef and taquitos. Sounds yummy; and you know me and the grill - anything on the grill is good as far as I am concerned

    Lady #2: Stromboli; classic salad; blueberry bread pudding
    Me: Grilled moho marinated chicken thighs; coconut rice with scallions; grilled squash; fruit or salad

    TUES ...
    Leftover sausage and peppers in a fritatta; fresh fruit
    or
    Chicken, onion, pepper, and cheese type of grilled sandwich with sweet potato fries

    WED ...
    Ladies #1 and #2: I think a dinner party, but don't know yet
    Me: Beef tips with my roasted tomatoes and peppers (freezer stash) in the crock pot; served over rice; grilled romaine salad

    THURS ...
    Lady #3: Out of town for 2 weeks
    Me: Leftover pasta from the freezer ... it is a creamy lemon pasta, so I may add some broccoli or asparagus; stuffed baked tomatoes

    FRI ...
    Ladies #1 and #2: Card/Game Night, TBD
    Lady #4: Cooking 3 nights to be delivered Sat am, TBD
    Me: Out, happy hour with friends; seafood place for chowder, broasted oysters, and calamari

    Tues: Golden Grills, dill pickle spears, and salad

    Wed: Sausage Potato Lasagna, steamed green beans, salad, and Chocolate Cheesecake

    Thurs: Myrtle Nelson's Chicken Potato Bake, steamed carrots, and salad

    Fri: Bacon Cheeseburger Pizza, salad, and Pitcher Bloody Mary

    Work lunches: Summer Minestrone and Sweet and Spicy Couscous Salad

    Breakfast: Blueberry Kuchen

    Snacks: Raspberry Shortbread Cookies

    Hi all --

    Those pesto polenta balls look great with that golden color. Do they get deep fried or can you do them in the oven?

    We were away this weekend and came home exhausted! I've been recovering and doing laundry and now can't put off shopping any longer. Here is the menu, such as it is.

    Sat – Asheville

    Sun – we had pasta with jarred sauce, frozen broccoli, and canned clams (pantry/freezer meal)

    Mon – we had "stirfry" with frozen fish, frozen green beans, garlic, and store-bought black bean sauce, with cooked rice from the freezer and toasted almonds (another pantry/freezer meal)

    Tue – Olive-Caper Spread with bread and some sort of chickpea/vegetable side

    Wed – beef version of Chicken Shwarma - Chawarma Lahme with tortillas, tomatoes

    Thu – Freezer Ready Cornflake Chicken Fingers (in the freezer), zucchini, chickpea fries

    Fri – going to free outdoor afternoon/evening concert; I think I will make Turkey Tamale Casserole ahead of time to have when we get back
