    Basic rice preparation used by middle eastern families

    Newbie "Fry Cook" Poster
    I used to date an Iranian fellow who made the most awesome rice by first simmering it, and then he'd put oil or butter or something on the bottom of the pot and it made this most delightful crispy "crust" out of the rice on he bottom of the pot. I have tried a bunch of times to recreate this, but i don't really know how he did it in the first place! does anyone know? I believe he used basmati rice.
