I am trying to organize my cookbooks but couldn't find anyway to rename one. Instead I copied them all to a new one that has the name I want. Is there a way to delete that empty cookbook?

When you have your cookbook open, look to the right and click Edit Cookbook. You can edit the title, the description, etc. from that screen.

To delete a cookbook, you click that same Edit Cookbook link. Scroll to the bottom of the screen - there is a button there for Delete This Cookbook.

There is no edit button on this cookbook. Could that because it was my first original one (My main Cookbook). All the rest of my cookbooks have the edit button.

The Main Cookbook cannot be deleted or edited. Everyone has this cookbook as a default cookbook.

You can, however, choose to individually delete all the recipes in your Main Cookbook and start with a blank slate. Recipes you want to keep could be put in the other cookbooks you generate.
There is a cookbooks forum with stickied threads with advice about managing your cookbooks. http://www.food.com/bb/viewforum?f=50
