C - I hope your week get better. I had a fair week, but this week will have to be flexible. So, I have things planned; but, I may have to mix and match. Just some odd things to take care of, so I am sure dinner plans may get changed up. Also, heading up to my friends house to (dog sit) for 3 days; and will probably just stay there (beautiful beach front home ... how the seriously rich folks live, lol). He is really my best friend, so always happy to do it. Besides, it's hard to resist.
    SAT ...
Mini Poker night with a couple of the guys. A baked chicken, potato and onion casserole; big classic salad; one of the guys is bringing his famous fish dip (delish); and the other margaritas all around; I'm sure the boys want bread, so I'll throw some in the ABM

I am keeping it simple this week as we prep for a long weekend away, so not much of interest here recipe-wise.

Sat – fish in a tomatoey sauce with green onions and olives, with bread and goat cheese (I accidentally opened a can of tomato sauce when I needed diced, so I had to use it up!)

Sun – leftovers from Arabic Green Beans With Beef with leftover barley/spelt (all set in freezer) – I keep having this on the menu and pushing it off because of impromptu gatherings – the meal that’s frozen solid anyway is the best one to postpone

Mon – rotisserie chicken with rice and Brussels sprouts; I’ve never had a rotisserie chicken before, but they are giving them away FREE this week at Whole Foods with coupon + $20 purchase … how bad could it be? supposedly it's an $8.99 value

Tue – leftover Mexican Tomato-Bean Soup With Corn Dumplings with poached egg and tortillas

Wed – Expect to have leftover chicken from Monday in some form, plus whatever else is perishable and needs to be used up

Thu, Fri, Sat – Asheville, NC! Hoping for good weather.

Hope everyone has a good week! --M

Ok, I'm ready. Really bad week. My niece took an overdose of Tylenol and is in the hospital in really bad shape. We're all praying she makes it, but it really is still in question. Prayers appreciated!!!

I have made a menu finally. Here it is:

Saturday - I made BBQ Armadillo Eggs (jalapenos stuffed with cheese in the middle of seasoned hamburger, grilled with bbq sauce basted on), and Jalapeno Potato Salad, and some cucumber salad - Was a great dinner! For dessert fresh mixed berries over angel food cake

Sunday - Happy Father's Day!!! Stuffed Avocado Salad, Chicken Pesto Pillows, Roasted Peppers and Sausage Pasta With Dijon Vinaigrette, foccacia, and Kona Banana Cream Pie

    Monday - Spaghetti and salad

Tuesday - Mongolian beef in crock pot with rice and vegies

Wednesday - BBQ Bacon chicken sliders and salad

Thursday - leftovers or open for stretch

    Friday - out to eat
