    Cheese Leftovers - What can I do with them?

    Left over cheese from a party. Wasn't served so it is fresh. I have about 7 slices of each left.

    I have Irish Cheddar...Imported Fontana...French Emmertal...and Dutch Gouda...what can I do with them.

    I thought of having onion soup with the French Emmertal.....but what to do with the rest.....Can I freeze and defrost without losing the texture/taste? Need your advice asap.

    This is very , very good! Halve the recipe if you need to.

    And there are always the quiche, strata, quesadilla, panino, patty melt, tuna melt, or enchilada options. They usually work with almost any mixture of cheeses like you have.

    I love quesadillas. Easy, quick, lunch or dinner. You can add meat, spinach, seafood, veggies, or JUST cheese.

    Thanks everyone...you really gave me a lot of ideas to try. I am always having company and have a cheese tray with cheeses. So many people enjoy it but towards the end of the party, I hate to admit this but I have thrown out so much cheese. So now I know what to do with it....thanks again.
