    To adapt the recipe, I only had to change two ingredients: the chicken broth and the sour cream. I replaced the chicken broth with some organic vegetable broth, and was a bit creative with the sour cream. I had previously prepared Roasted Beets With Potato Garlic Sauce-Patzaria #503872 and had leftover garlic potato sauce. I used this instead of the sour cream and, Oh My Goodness - was it tasty! The sweet creaminess of the pumpin soup and the tangy garlic of the sauce was a match made in heaven! As my review states, I couldn't decide which was better - a bite with sauce, or a bite without!

    Between Rachel's onions and this creamy soup, I can't wait to try the rest of the food at the wedding!!!

    For the Make Mine Vegan Challenge, with a recipe to be used in the wedding challenge, I made Greek Lemon Chicken Soup #502895 by ElizabethKnicely.
    To make this soup vegan, I made the following changes:
    Instead of chicken, I used Gardein Meat-Free Chick'n Scallopini which I pan-fried in a bit of olive oil. I replaced the chicken broth with vegetable broth and the chicken base with Better Than Bouillon vegetable base. I used butter/margarine-free Earth Balance instead of the butter. For the egg yolks, I combined flaxmeal with hot water. I halved the soup recipe and used 2 T flaxmeal blended with 9 T hot water - mixed and cooled. It worked perfectly. FYI Other vegan substitutions you can use for eggs = soft tofu, mashed bananas, arrowroot powder, cornstarch (1 T dissolved in 2 T water for each egg) and chickpea flour. You need to experiment a bit to see what works best in different recipes. I found the flaxmeal version good for this soup. The soup turned out excellent!!

    The Panthers have a "group question" about this challenge icon_lol.gif :

    Does the chosen recipe have to be modified, or is it okay to choose one that is already vegan-suitable as written? We're just trying to make sure we have three recipes on the wedding menu that will fit for this challenge...

    Hi Muffin Goddess,

    The intent of this challenge was to be a teaching exercise. To see how easy or difficult it might be to make a recipe vegan. If you choose 3 recipes that are already vegan it takes some of the fun out of it.

    There are a number of recipes in the cookbook that can be easily modified as well as many that are vegan as is. In the spirit of the challenge it would be nice for all teams to choose a menu that they like for the wedding and then if necessary adjusting recipes to suit the needs of the vegan guests as the challenge asks.

    I made Greek Iced Coffee by loof. It looked like a great coffee, but the method by which I made it vegan made it taste pretty insipid. I really don't want to give it a mediocre review, as the original recipe is not at fault, it is my modifications of it that are. What do I do?

    Leave the comment as you did here. Have you made the recipe as it is written? If so then you could give a rating based on that.
