    Tacos with~

    Love Tacos! I spend more time chopping what goes on them than I do getting the meat ready!

    Diced red onions, chopped pickled jalapenos, chopped tomatoes, sliced black olives (my thing, DH hates them), shredded lettuce, & cheese. I like to use half shredded sharp cheddar, half crumbled queso fresco. I've been known to put crumbled feta on mine as well-love the tang.

    I really do not like packaged taco mix so I use Taco Seasoning Mix. There is one packaged mix I will use, it's Chi-Chi's Restaurante Seasoning mix. It's a blend of dried onions, garlic, green chilies and msg. My husbands favorite icon_lol.gif I keep 2 on hand in case of emergency.

    My DH isn't big on sides with tacos but I am. I make a recipe similar to Black Bean and Corn Salad - Spicy Mexican Salad/Side Dish minus the cilantro. I also fry my corn in a dry skillet to get some brown spots. It's a fast recipe to make early in the afternoon so the flavors meld.

    Another side I like is Arroz a la Mexicana-Traditional Mexican Rice. Another "get it ready ahead of time" but it's worth it.

    So, what's your favorite taco time recipe-with or without sides.

    Oh yeah. 10 minutes before the taco meat is done I preheat the oven for 5 minutes at 400 degrees. Shut off oven and place a cookie sheet on the bottom rack. Hang your taco shells from the top rack. The cookie sheet will catch the oil that drips off your shells-nice crunch and flavor so it's worth it. You can cover our sheet with foil for a fast clean-up.
