    (actually I don't know how authentic it is, but I used Thai rice noodles, and added some oyster sauce, so it is my version of Thai!)

    It would have been a better picture if I had some fresh parsley, but no, I had none icon_sad.gif

    I'm torn between Cajun shrimp and this one *sigh*
    Today we visited Saudi Arabia with this lovely dish:
    Eggplant and Pomegranate Stew (With Beef or Lamb) #360910 by Aisha al Saieed
    We had this with brown basmati rice - really wonderful dish. Not overly spicy but very yummy.
    Being a very low-carb vegetable, eggplant is the perfect thing for diabetes friendly dishes.

    Looks like we are having some very wonderful meals! Tonight we are having leftovers. The brats, coleslaw and potato salad were great last night. Around 3:00 p.m. it started pouring rain but by the time the brats needed to go on the grill the weather had cleared.

    pammyowl, what a wonderful looking photo. We beat the rain yesterday after church. DH mowed the grass while I cooked on the grill. I adapted

    Funeral Potatoes by Lubie

    to make it gluten free. In place of the canned cream soup I used chicken stock thickened with brown rice starch. The butter was cut substantially, plain Greek yogurt used in place of the sour cream and gluten free potato chips were crushed and placed on top. It went very well with steak that was slathered with a garlic paste and allow to marinate overnight in the refrigerator. This was served with fresh grilled asparagus on the side. The asparagus was cleaned, ends snipped and then drizzled with a light balsamic dressing, wrapped in foil and cooked on the grill.

    This morning the rain continues.

    Paula, good luck that your DH got the lawn done yesterday! If we'd mow here on Sundays, the neighbours would most probably hang us on the next tree icon_lol.gif
    (That's where those funeral potatoes come in I guess)
    Is hash browns just shredded potatoes like you'd use in latkes or roesti?
    We ha asparagus, too, Asparagus Risotto With Pine Nuts #85482 by evelyn/athens. Splendid trip to the Mediterranean.
