    A Diabetic Summer Trip!

    June has arrived, with sunshine and warm weather and fresh fruits and vegetables popping from the earth everywhere. What better time could be there for a culinary trip to explore what diabetes friendly gems are hidden on the plates all around the world?
    Come join us on a diabetic summer trip through the cuisines of the world!

    While due to changing to unhealthy diets and sedentary lifestyle, nowadays most industrial countries face the same problems of increasing obesity and related health problems like diabetes type 2, heart diseases and stroke, most genuine cuisines naturally are diabetes friendly.
    One of the main reasons for this is the fact that one hundred years ago, besides not having processed and fast food and spending most of the time in front of computers, meals used to be smaller than today.
    One of the best examples might be the Japanese cuisine. Japanese people who stick with their original diet, are about the healthiest and most long living peope on earth - and their average diet contains about 25 % less calories than the average American diet.

    Japanese food for diabetes:

    Another wonderful example for a diabetes friendly cuisine is the mediterranean one which has so much more to offer than pizza and pasta. Heart healthy oils, lean protein, lots of fresh fruit and vegetables.

    Scientific research has found that people who adhered closely to a mediterrranean diet had a lower risk of diabetes:

    O.K., my first destination was Tunisia with this delightful dish:
    Fish Fillets With Harissa and Black Olives (Tunisia) #220950 by Alskann.
    Fish of course always is a great source of healthy protein, which is essential for any healthy diet. There is no doubt about the health properties of the other ingredients either, but as an interesting point I want to emphasize the harissa in this recipe which is made of chili peppers. Recent research has found that one of the chemical compounds of chili peppers might be a key to curing diabetes type 2:

    I went to India today! A curry dish with chicken, brown rice, golden raisins, cinnamon, cauliflower, peas,etc. Delicious!

    Today, we had green chicken Thai curry - not from this site, though, but my standard fron pre-recipezaar times.

    Thai curries mostly are made with red, green or yellow curry paste - very hot. Also they use lemon grass, lime juice, galangal, kaffir lime leaves, fish sauce.
    They taste completely different from Indian curries.
    The chicken green curry which I made today was with green curry paste, onion, lime juice, brown sugar, kaffir lime leaves, fish sauce and coconut milk.

    Me neither, I always decrease the amount of curry paste considerably. Like one teaspoon for a dish of 4 servings (instead of 2 tablespoons!). Then it's a bit spicy but not really hot, and very fragrant. I love the lemon / lime flavours in thai dishes.
    Also one of my favourite salad dressings is: 2 tablespoons lime juice, 2 teaspoons brown sugar or honey, 1 tablespoon fish sauce, and optional 1 teaspoon sweet chili sauce. That with tomato, cucumber, avocado and some chopped salted peanuts or cashews - heavenly!

    Hello Mia and Pammowl. Have you ever had a post ready to go and then lost it. icon_redface.gif I went searching for a recipe and forgot to open a new tab. As I was saying......

    DH and I have been in Atlanta celebrating birthdays with the grandkids. We got home a couple of hours ago. Dinner tonight is by accident. Accident being when I was putting something in the freezer a package of enchilada sauce popped out and the plastic freezer container cracked. The sauce is now defrosting and will make great cheese enchiladas. The sauce is:

    Hatch Red Chili Sauce by Miss Ann

    I soften corn tortillas in a small amount of olive oil (heart healthy), stuff with a bit a grated onion and cheese, roll and then poured the warm sauce over all. They go into the oven for about 30 minutes or until heated through and cheese is melted.

    Chiles can deliver a wide range of health benefits, according to New Mexico State University Regents Professor of Horticulture Paul Bosland, director of NMSU’s Chile Pepper Institute, and his colleague, Danise Coon.

    “One red chile pepper a day provides all the vitamin A you need and one green chile pepper has more vitamin C than six oranges."

    Capsaicin, the active component in chiles, is used in creams for arthritis, and in patches and creams to relive sore and aching muscles.

    Research has established that chiles “can help lower cholesterol and help burn calories by triggering a thermodynamic bum, which speeds up the metabolism,” Bosland said. “When you eat chile, your body’s immune system begins to be kicked up a notch, and inducing your body to raise your immune system creates a prophylactic effect that your whole body reacts to and gives you overall health benefits.”

    That accidental dinner sounds delicious! I've made enchiladas only once because I'm not really good at making tortillas icon_lol.gif
    But I should practise and make it more often, the sauces are so good!

    Thanks for the great article about chili peppers! Excellent information - I knew about the capsaicin for arthritis etc, about the fat burning, and the healing effects in diabetes, but I had no clue that they contain so much vitamin C. I guess that is part of the strong antioxidative effect (which probably keeps food in hot countries from rotting immediately).

    Hey Mia. Interesting comment about the Vitamin C. I really didn't know that. See how much you teach me. icon_smile.gif I would send you some tortillas but they would probably be past their prime by the time they got to you. I have only made tortillas once or twice myself. I am blessed that I can buy them in the store.

    All the information you have posted has been very interesting. Thank you! I would like to travel with everyone and my first stop is the Asian countries. I would like to tag Sushi-Roll Rice Salad#203981 by PaulaG#133174. I love any kind of sushi and this one will be a light dish to serve with some Asian salmon. (Hope I posted this right.) This contains edamames, scallions, cucumber, carrots with a dressing with wasabi paste...yummy. I am also adding red/green diced peppers.
