    I'm making Fried Chicken served with
    probably the usual sides.
    You know like mashed potatoes,
    and some sort of veggie.

    Back on the diet today - weather permitting Grilled Chicken and assorted veggies on the grill. If it's too nasty to grill - will roast in the oven.

    Don working late again tonight so I'm trying to make meals that either take 5 minutes to prepare or in this case reheat. Chinese Honey garlic spare ribs, fried rice and a mixture of stir fried veggies.

    Ham Steak grilled, with a Glaze along with Bourbon Baked Beans, we're making the recipe up as we go and they aroma is fabulous, and Potato Salad ( I bake my potatoes for salad, makes for a much less "wet" salad)

    I have always baked my potatoes for potato salad. I feel with baking, the flavor of the potato isn't lost in water. I never considered the "wet" factor, but I get what you mean. Now you got me hungry for my potato salad. MMMMMMMM

    Before baking I sprinkled Olive Oil and Kosher Salt on those babies, it's going to be sooooo good!

    Before baking I sprinkled Olive Oil and Kosher Salt on those babies, it's going to be sooooo good!


    I don't do that, but definitely have to be baked in the OVEN, not microwaved. When they are warm enough to handle is when I peel them, and cube them, then while the potato is still a little warm, I sprinkle some vinegar on the spuds with some S&P. I let that cool, then I add in all my other stuff. OK, I guess I'm making potato salad today. icon_lol.gif

    I've never tried baking my potatoes for potato salad. Sounds interesting!

    Today I'm making Fiesta Meatloaf, fresh green beans, and baked potatoes. I'm also making a pot of beef stew for later in the week. I've been working 10-10 1/2 hour days lately and tomorrow DH starts OT (12 hours a day) so we'll be able to just come home and nuke something.

    I planned one thing; but, things changed.
    My friend gave me 5-6 zucchini (fresh); so, I want to use them up.

    Sort of a CORN night. I have ribs from last week in the freezer, just wrap and foil and heat on the grill. And, I have a small corn salad to mix with fresh bread crumbs, cheese, some olives, and peppers, and stuff my zucchini. Top with tomato slices, and grill.

    But, I did make a loaf of zucchini bread for my friend; and tonight, I think my blender zucchini soup which takes 20 minutes.

    Lady #4: 2 meals to be delivered Mon am
    - Blackened shrimp Caesar Salad with garlic bread
    - Beef Tips in a red wine gravy, with pearl onions and mushrooms; served over buttered noodles; baby carrots or broccoli, I have both, or maybe a mix

    Change in plans, at least as far as the sides. Zucchini and Mushroom Skillet instead of the green beans and DH saw this at the store and wanted to try it, so no potatoes. (Can I just say I'm not optimistic about this one, but what can ya do?)
