    Happy Mother's Day! I hope you all enjoy your day. My boys are cooking tomorrow and whatever it is it is a surprise and it will be wonderful.

    I have made my menu this week keeping in mind putting things into the freezer.

    Saturday -- I made and enjoyed Marvellous Mini Meatloaves (With Options!) OAMC. I opted for the Mexican plan and my husband thought it had too much of a cumin taste. What does he know?? The cumin was in the chili powder and I used less than I do when I make chili but he did manage to clean his plate! And I do have some in the freezer and I know we will enjoy them.

    Sunday -- Mother's Day, not cooking!

    Monday -- Sweet Salsa Dump Chicken - OAMC.

    Tuesday -- Chunky Mushroom Barley Soup. We both love soup, thankfully!

    Wednesday -- Ziti Pepperoni Casserole. Couldn't resist this one, Charmie!

    Thursday -- Pork tenderloin, can't decide on my recipe yet but love pork.

    Friday -- Lazy Perogy Casserole, another family favorite.

    And that is it for another week! Have an amazing week. icon_biggrin.gif

    Tue – cheeseburgers with veg and chickpea fries (still didn’t get to this last week)

    Thu – chicken stirfry with cashews and leftover rice/other from Wed

    Fri – leftovers from Monday

    I have to admit, I have made the Paula D, layered cornbread; very tasty.

    Also, I love the unstuffed cabbage casserole Really delicious.

    And Gayla, soup; I'm with you. I love soup. I know most don't think of soup for the summer, but even with or especially when it's warm; I love soup. I can have a bowl of soup ... and a small salad, and it is a perfect summertime dinner for me.

    GaylaV, I don't know how you feel about cooking with canned soup.

    But this is a really inexpensive, but delicious crock pot recipe for pork tenderloin.

    Add 1-2 small tenderloins, 1 can of cream of mushroom soup, 1 can of diced tomatoes, an onion, chopped; and 1 pint container of the pre-sliced mushrooms from the grocer (just white or button mushrooms).

    Add a bay leaf, and season the tenderloin with any all purpose seasoning and a pinch of salt and pepper.

    Literally season the pork, add to the crock, add the onion, mushrooms, bay; then mix the soup and tomatoes and pour over the top.

    Turn on low for 6-7 hours. My new crock took 6 1/2 hours. Serve over buttered noodles or rice; and serve with a salad. It is fall apart, great flavor, tender and the sauce is delicious. I add a little white wine to mine, but not necessary. I sounds too simple, but it is really delicious

    You don't even have to brown it first either, Just a plop and drop recipe.

    Also, leftovers are perfect to add to soup. Even the gravy is good in a soup base.

    I took about 1/3 of a tenderloin including the gravy; and added carrots, potatoes, peas, broth and made a stew soup. I served it with cheesy biscuits.

    sounds good and perfect for stitching get-togethers. Having another one this week - not sure what one of the ingredients is though (pepitos - can this be skipped or what is it? - I can get most Mexican spices/ingredients).

    Gday and BIG thanks ...sorry Pepitas are simple pumpkin seeds....and yes they can be skipped together without taking away the taste

    SC -- Thanks for taking the time to typing out your recipe for pork tenderloin. I am not at all opposed to using canned soup. I have printed out your instruction and will make it very soon, half for dinner and half for the freezer. Thanks so much.
