    Menu for Week of May 11 through May 17, 2013

    Hello menu friends!!! Happy May and Happy Mother's Day too!!
    Do any of you have special plans for Mother's Day? I don't like to go out (other than to church), so my boys usually cook for me. Not sure what they're making yet, but I'm prepared to sit back and be the queen!!!

    I think my DH is going out of town on Mon-Wed to visit his brother, so not too much cooking. But then again, my eldest DH's games are televised on MiLB.com on Mon-Wed, so there might be people over to watch the games. So I'll still plan on cooking some!

    Saturday - youngest grandson's play, so not sure if we'll be eating at home

    Sunday - Mother's Day - QUEEN!!!

    Monday - 20 Minute Creamy Pesto Chicken and Bow Ties, with salad and bread

    Tuesday - Ziti Pepperoni Casserole from freezer

    Wednesday - Chicken tacos in crock pot

    Thursday - Avocado Lemon Pasta with salad

    Friday - leftovers or out to eat!

    HAPPY MOTHERS DAY WEEKEND EVERYONE!
    Nothing special here this weekend. My son I know will forget ... takes after Dad; but, he will call a day or two later and wish me happy mothers day. Better than nothing. He has to work, so I don't expect him to get me anything.
    Got most everything made last week; but, it did get changed up. Same as this week - even more crazy. So, a lot of things ON hand I can make quickly or change.

    SAT ...
    BBQ Ribs (a new recipe); grilled corn in the husk; broccoli slaw

    SUN ...
    Lady #4: Out of town this week till Thurs; maybe make something for her weekend
    Me: Friends BBQ / house warming, ex co-workers, I won't stay long, stop-visit-eat a bit to be polite, (knowing them ... tons of food)
    Making another pot of soup for the freezer (veggies from the market)

    MON ...
    Lady #1 and #2: Baby back ribs/BBQ sauce; roasted parmesan potato wedges; broccoli slaw salad; home made rolls
    Me: Shrimp caesar salad; homemade bread (using baby salad shrimp; homemade caesar dressing; other veggies; mix of romaine and butter lettuce from my garden)

    TUES ...
    Leftover ribs; grilled stuffed zucchini with corn, peppers, and cheese; fruit

    WED ...
    Lady #1 (dinner party): Not sure of the menu (4-5 guests)
    Lady #2: Chicken cordon blue casserole (new recipe), served over rice; steamed broccoli
    Me: Work evenings, so taking leftovers or something from the freezer

    THURS ...
    Lady #3: Family in town
    Me: Ravioli (freezer stash) with a mushroom broth/sauce; grilled romaine with a parmesan dressing; garlic bread

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD, thinking of: pimento cheese sandwiches, egg salad sandwiches; chips; home made pickles, olive tray (they love that), martinis, and a creamy minted pea dip with veggies.
    Me: Maybe poker night, maybe a gf for dinner, maybe movie night; or, maybe go out.

    I'm using lots of the pantry and freezer this week
    Breakfast is always cottage cheese, yogurt or fruit
    Lunch ... leftovers or soup

    Happy Mother's Day Charmie and Twinie WHOO HOO!

    I KNEW there was a reason in addition to my homemade Chicken Mole I made today (with Mexican chocoloate), I also made a Mexican chocolate oatmeal mini muffin today too!

    LOVE cooking and baking with Mexican chocolate...is like no other chocolate in the world!

    no cooking this weekend - graduation and Mother's Day!

    Monday: Asian Style Short Ribs (Crockpot) w/veggie
    Tuesday: out with friends, everyone else pizza
    Wednesday: Fish Fillet Sandwich, salad
    Thursday: hotdogs and chips
    Friday: out to eat

    chicken tacos in crockpot sound good - do you have a recipe? Saved the chicken and bow ties recipe -- sounds like something my family will like!

    Yummy Crock Pot Shredded Chicken for Tacos! is similar - using salsa instead of Rotel.

    C - Pimento cheese sammies is good. white bread when I grew up; a good grain now. It's actually REALLY GOOD.

    Another vote for the mole sauce. I just love the richness and complexity of it, and the beautiful mahogany color. Happy mother's day all around. Nothing special planned here --- with an 8-month-old who is very mobile, I don't get much time off. Her best gift for me would be to take an extra nap during, but that would cut into her active plans for the day, so it won't happen. icon_smile.gif

    Sat – Unstuffed Cabbage Roll Casserole (modified and made with collards; made yesterday!!) over noodles or with bread

    Sun – tortilla roll-ups with spinach, chickpeas, goat cheese, maybe with poached egg

    Mon – my version of Paula Deen's Layered Mexican Cornbread

    Tue – cheeseburgers with veg and chickpea fries (still didn’t get to this last week)

    Wed – Honey Ginger Grilled Salmon with brussels sprouts and brown rice or some other grain

    Thu – chicken stirfry with cashews and leftover rice/other from Wed

    Fri – leftovers from Monday

    This is my favorite recipe, although I use a mix of mild and sharp cheddar. There are some great ones on here, the but this combo I found to be the best. I have been using this for years.

    Although I often get it from a local deli, that makes it fresh daily. For just me, I can get a small container which is plenty for a couple of sandwiches. Otherwise, if I'm making if for the ladies I cook for, or for our poker nights; I'll make a big batch and use this recipe.
    Great grilled or not, perfect on crackers, wonderful stuffed in celery. You know those mini bell peppers that are in the grocery stores these day. This cheese is great stuffed in them. Also great stuffed in green olives too.
