    Easy day here. First gold date with Mum followed by lunch so I won't want anything much at dinner. Don had his mens Golf Night so he will be eating there.

    I'm not sure yet.... icon_confused.gif I am thinking about Stuffed Pasta Shells, or Southwest Taco Pie that I think, Mums the Word, mentioned a while back ago.

    Long, long, long, long night. Our next door neighbors house caught fire in the middle of the night so I spent the wee hours of the morning holding my friends hand-I don't wanna cook but I will!

    I marinated some chicken tenders in buttermilk yesterday-I think I will spice them up Greek Style and fry. I found some phyllo in the freezer and I have a ton of kale so I will make a version of spanakopita using kale and feta. Maybe a salad. For sure more coffee icon_wink.gif

    You are a great neighbour/friend to offer comfort and a shoulder to lean on.
