    Would like some suggestions

    Hi all I have 4 pot lucks within the next 10 days icon_eek.gif

    Now comes the hard part what ever I take needs to be able to sit at room temp for hours.

    And because I have 4 pot lucks and 3 parties within a two week period would prefer something healthy and low cal.

    Was kind of thinking about maybe making Layered Hummus Dip one of the pot luck recipes.

    So what do you all think?

    I've made Sweet and Sour Marinated Vegetables several times. It's colorful, can be made ahead, and offers a different spin on marinated veggies. I've made it with both the splenda and sugar options. I prefer it after marinating at least overnight. I layer everything in a plastic bowl with a tight fitting lid and shake it when I think about it. I layer the veggies into the bowl with the crisper veggies on bottom and the lighter on top so that things like cauliflower, carrots, & celery sit in the liquid.

    My family raved about Blueberry Pecan Corn Muffins by nemokitty. They are a decidedly different cornbread, NOT a muffin. They would be cute bites for a buffet table baked in a mini muffin pan. The blueberry & pecans in sweet cornbread made us swoon. My mom though expected breakfasty style muffins and didn't love them as much. You know your groups best. Maybe you could make several styles of mini cornbread. Jalapeno, plain, & blueberry pecan.

    I know I'm chiming in a little late and you might have already made your choices. But this just came to me.

    ~ Spinach Balls

    My family really loves them. and they always go fast at our gatherings. And the batch makes a lot, so you could save yourself a little time by splitting a single batch between two different potlucks.

    They would transfer well and don't need special heating or chilling, so they'd be fine set on a buffet table for hours.

    Thanks NG, sorry did not get back to you sooner but life has been a bit hectic.

    I end up using Susies suggestion of Blueberry Pecan Corn Muffins, Layered Hummus Dip, Garlic Mayonnaise Dip and E-A-S-Y Cake Mix and Cool Whip Cookies now I just need to go back and wright some reviews icon_wink.gif icon_lol.gif
