    Pork Chops baked with COOKED rice

    Does anybody have a recipe that goes something like this, you take a mound of cooked rice and put it in a 9x13 pan, you place a pork chop that's been browned on top of the rice....repeat that with your other chops, then top it with some canned tomatoes and bake it?

    This is a recipe my sister made but unfortunately she's passed away so I don't know anyone else to ask. That may not be everything that was in the recipe, I just remember the browned chops on top of the cooked rice.

    I posted this request over a year ago and got a lot of responses......but most of the recipes called for adding UNcooked rice to the dish and then baking.......thought I'd give it another try.

    SAUCE:
    1/4 c. oil
    3 medium tomatoes, chopped
    2 medium onion, chopped
    3 gloves garlic, minced
    1 tbsp. sugar, if desired
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. oregano
    Heat oil in fry pan. Add tomatoes, onion, and garlic; saute for about 5 minutes, stirring constantly. Add salt, pepper, and oregano. Cover; simmer for about 45 minutes on low heat. Set aside.

    RICE:
    1 cup rice, Water, Salt
    Cook rice according to package directions until done. Rinse, drain, and set aside.

    PORK CHOPS:
    4 pork chops
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. paprika
    2 tbsp. oil
    1 tbsp. butter
    3 tbsp. Swiss cheese, grated
    Season pork chops with salt, pepper, and paprika. Heat oil in fry pan. Add chops; fry 5 minutes on each side or until brown. Grease well a 2 quart casserole. Put half the cooked rice in casserole; pour half the tomato sauce over rice. Arrange 2 pork chops on top. Sprinkle with half the cheese. Repeat layers; dot with butter. Bake in 350 degree oven 30 to 40 minutes. Serves 4.

    only thing remotely like that was my sister would fill a pan with broth, add the uncooked rice and lay pork chops on top(they sank icon_smile.gif ) and covered tightly with foil. 45 or so min later, the rice and chops would be done together.

    Found this one. Could it be the one?
    BAKED PORK CHOPS WITH RICE AND
    TOMATOES
    6 (1 inch) pork chops
    2 c. cooked rice
    1 lg. tomato (fresh or canned)
    1 lg. bell pepper
    1 med. onion, sliced
    2 (No. 3) cans tomatoes
    Salt and pepper

    In large skillet brown the pork chops that have been seasoned with salt and pepper. Place in large baking dish so each pork chop will be on the bottom. Cut green pepper in rings. Place one on each pork chop. With large spoon dip rice, pat until firm and place in bell pepper ring. Place slice of onion on each and top with tomato slice. Empty canned tomatoes in pan and chop or squeeze until all tomatoes are broken up fine. Season with salt and pepper and pour around pork chops. Cover and steam 1 hour in oven at 375 degrees. Serves 6.

    1Steve, that does sound very familiar....although I remembered the rice bring on the bottom. I think it would be good either way.

    I tried 1Steve's recipe for pork chops and rice the other day and thought I'd post a few of them here. They were delicious!
