    With only a couple weeks left, I better get with the program and start cooking! I'll make Brown Rice With Fried Bananas from Angola Recipe # 499408 by Sharon123 for now. Do I need to make one from each of the "A" countries or can I just make one recipe from one country?

    Hi Linky, glad to have you on board. You can make as many or as few recipes as you like, so if you just want to do one country, that's all good.

    I have really enjoyed making recipes from different countries! An adventure it is. Looking forward to more fun in I think it's October? I'm packing my bags and going to Colorado for a few weeks, that will be an adventure too! And then there's the world tour!

    I am thinking ahead to September and remembered that Antarctica was on
    the list as a country. It is a continent, but not a country in its own right.
    Seven countries have territorial claims in Antarctica, with Australia having
    the biggest chunk. Others are the United Kingdom, New Zealand, Norway,
    France, Argentina and Chile. So you might not want to include it in your
    overall odyssey, because its cuisines are those of the claimants.

    Well, we had an interesting "trip" to Angola the other evening. I unfortunately didn't know that the plantains should be black and mine was very un-ripe and hard and flavorless. Oh well, next time! The rest of the dish tasted great!

    Linky, I used regular bananas that were ripe but still firm, and I loved the contrast of sweet with the tomato/peanut sauce. I will revise the recipe to say ripe bananas or plantain. Thanks for trying the recipe!

    I did think of that, but thought it would be fun to include as people will have to research. I have actually found a couple of recipes with an Antartica feel, they probably aren't practical, but it would be fun to see what people end up submitting.
