    Need idea for potato dish to go with lobster

    Having a lobster dinner at a friend's house Thursday. The lobsters, from New England, will be delivered that day but we don't know what time. We have been asked to bring a potato dish, and I'm looking for one that will hold up if there's a delay. I've considered Crash Hot Potatoes and Make Ahead Mashed Potato Casserole, but neither seem to be what I'm looking for. Any thoughts out there?
    Oh, yeah, I won't be home all day, either. That makes it tougher. We could choose to bring dessert instead, but I'll see if anyone has any brilliant suggestions before I switch.

    When we have a clambake or shore dinner ( I live on the New England Coast ) - we usually have red potatoes cooked with the clams / corn and lobster. You could try to cook them and then keep on warm in a crockpot.

    I also enjoy potato salad with lobster and clams ( OK - I like potato salad with anything and would eat it for breakfast if I could )

    Yes, I've been thinking a potato salad is the way to go, but I'd like to find a different recipe rather than the classic mayo-based ones or the vinaigrette dressed ones. I could invent a southwestern style one with roasted green chiles, calabacitas and corn. Something unusual would be nice. The other guests are visiting from Tasmania.

    I have a potato salad recipe, on another site which is a bit different. NO mayo and NO egg, and a nice tang to the dressing.

    Salad:
    2 pounds small red potatoes,
    1 medium onion, diced
    1 large celery rib, diced (don't forget the celery leaves)
    2 scallions, diced (green and white parts)
    1 tablespoon capers
    3 tablespoons fresh parsley, fine minced
    2 tablespoons fresh herbs (a mix of 3/4 tablespoon basil, 1/4 tablespoon oregano, 1/4 tablespoon tarragon, and 3/4 tablespoon thyme)
    Salt and pepper

    Dressing:
    1/2 cup olive oil
    1/4 rice wine vinegar
    2 tablespoons dry white wine (chicken broth can be substituted)
    2 tablespoons dijon mustard
    1 garlic clove, minced
    Salt and pepper

    I have not tried this yet ~ the photo was gorgeous with the beans and tomatoes! Serves 12, but you could reduce it! Italian Potato Salad, Gorgonzola, and Orange Balsamic Dressing

    Here is my suggestion: I have served lobster with roasted asparagus tips and roasted, sliced red potatoes with a red pimiento sauce. It is an elegant and very tasty dish to go perfect with lobster. icon_biggrin.gif icon_wink.gif

    Thanks everyone, I'm going with the Italian one, despite my husband's skepticism. I like the idea of the orange flavors in it.
