Hello menu pals!!! A gorgeous day here in so callie. Enjoying the nice evening and listening to baseball.
Everything got made on my menu last week. I'm proud of myself!! I'm learning what meals I can make in a short amount of time, since I get home later than I'm used to.
Tomorrow (Saturday) we're going out to eat with my SeriousEats.com folks. We're going to a Japanese restaurant in Orange County. We usually meet up in Los Angeles, but we're branching out! icon_smile.gif
Other than that, not much going on.

Here's my menu for the week. Share yours!!

    Saturday - Japanese food!!!

Sunday - Crisp Panko Chicken Cutlets w/Tonkatsu Sauce, sticky rice, vegies

Monday - Baked pasta with sauce from freezer and homemade meatballs I hope to make on Sunday.

Tuesday - Cajun Ham Hash with leftover Easter ham, salad

Wednesday - Buffalo chicken mac and cheese, salad

    Thursday - haven't decided yet icon_sad.gif

Friday - leftovers or out to eat!

Morning all. Had some scary weather this week in our area, but we got mostly wind and rain. No tornadoes touched down near us. icon_smile.gif So on we go...

    Here is the plan, Mon-Fri:
Monday: Broccoli and Pasta, steamed carrots and salad

Tuesday: Mushroom-Stuffed Hamburger Steaks, steamed broccoli, baked sweet potato and salad

Wednesday: Chicken Stroganoff, roasted asparagus, salad, and Fresh Strawberry Cobbler

Thursday: baseball game night--Spicy Baked Shrimp, bread, salad, and Sunny Spring Lemonade

Friday: baseball game night--eat out, then Hot Mexican Cider (still cool at night)

Work Lunches: Chili Cornbread Salad and Honey Mustard Turkey Meatballs

    Breakfast: Very Berry Coffee Cake

    Snacks: Spring Muffins

Morning Everyone, My oven/stove is still broke, next week when the part comes in. At least under home warranty - $60 and fixed.
Pretty low key this week. Movie night w/gf; lunch for a birthday; and, a new potential catering client. Otherwise sos, but maybe some fishing one night this week offshore. Need to re-stock the freezer.
    ---------------------------------------------------------
    SAT ...
Me: Breakfast for dinner - Omlette with avocado, tomato, and cheese; hash browns; fruit

    SUN ...
Lady #4: I think she is just getting back in town; so muffins for the am
Me: Brined and grilled chicken quarters, not sure of the sauce (I have a few sauces given to me at Xmas; so, one of those); zucchini and summer squash on the grill; http://www.food.com/recipe/creamy-cucumber-salad-116236 (yogurt vs sour cream)

    MON ...
Lady #1, #2, and Me: http://www.food.com/recipe/treebeards-red-beans-and-rice-121498, but many tweaks, but the base recipe is the same; salad (dinner rolls and fruit for the ladies)

    TUES ...
    Lady #4: TBD
Me: Out w/potential catering client, don't know where we are going

    WED ...
Lady #1 and #2: Soup and grilled vegetable sandwiches, (barley or lentil was requested)
Me: Whole grilled trout, stuffed with lemon and herbs; cucumber tomato salad over the top; grilled potatoes wedges w/simple herb garlic oil

    THURS ...
Lady #3: Don't know yet, just back in town
Me: Work, so probably take leftover red beans and rice w/salad with me

    FRI ...
Ladies #1 and #2: Card/Game Night - http://www.food.com/recipe/seafood-cobb-salad-with-a-florida-twist-391161 served family style; pumpernickel rolls (from my ABM); cream of leek soup (recipe TBD)
Me: Helping a friend move - I have corned beef and swiss in the freezer. We'll probably toast up a couple of reubens (since I have everything), chips and pickles. A few beers and veg in front of the tube.
    -------------------------------------------
Breakfast: sticking with my cottage cheese, fruit or yogurt
Lunch: Usually nothing, either a cup of soup, or a 1/2 sandwich. I have some ham and tuna

And, don't forget to clean out your pantry, fridge and freezer ... there is always a meal waiting to be made!!

    Hi all --

The weekend really got away from me -- but it was beautiful out and we got to spend lots of time just being outside, which is so nice.

    Here we go:

Sat – slightly modified Chicken with Black Beans and Rice (rice in freezer; made 2 dinners' worth to freeze half)

    Sun – fam dinner

Mon – gozlemes http://www.bestrecipes.com.au/recipe/gozleme-L12542.html with veg and poached egg; remember when Mickey made these and posted those amazing pictures? I am hoping to recreate!

Tue – stuffed fish entrée (gift of frozen stuff from Omaha steaks), Brussels sprouts, chickpea fries but baked (http://vegetablematter.blogspot.com/2010/02/panelle-chickpea-fries-with-dipping.html?m=1)

Wed – SIL and husb coming over to plan for some upcoming family stuff; we are collaborating on something simple; TBD

Thu – Kenyan Ground Round Curry (will double and freeze half) with green beans and Authentic Injera (aka Ethiopian Flat Bread)

Fri – Chicken With Olives (half to freeze; getting a theme here? icon_smile.gif) over millet or rice and with some kind of veg

Enjoy the week! Happy tax day! (ok, maybe not so much on that last one)
