    Crockpot for spring?

    As we move into warmer weather, are there any crockpot dishes that you make regularly?

    Well, I make this - we love it as a light meal, with a wedge of lemon, a bit of horseradish, and some potatoes or good rye bread, KoŇ°eliena (Lithuanian Chopped Meat in Aspic)

    Otherwise, I make things like pulled pork, or chicken dishes. I've been making turkey meatballs a lot too, they are good for sandwiches or with rice

    I've been using my 1.5 liter to make beans, and then I combine them with tomatoes or zucchini and chopped mozzarella to make bruschetta. It's fun thinking of different ingredients to use, but the beans give it more substance.

    I like to make cacciatore (brown chicken and add later) in the crock pot as well as roasts and stews which I make year round. Pinto beans are a favorite too.
