    Hi menu peeps!!! How you be?? I'm doing pretty well. I made everything on my menu last week!! What a rare occurrence!!
    Easter went really well. Love getting together with my family. I ended up doing way less cooking than I usually do. That was both good and bad. I didn't stress too much and had a little time to sit and drink coffee before everyone got there; but then I really do like to cook and felt like I should have done more!! Oh well. It went just fine. icon_smile.gif
    This coming week should be relatively calm. No big activities coming up. So here's my menu. Share yours!!!

    Saturday - this is still open. I'm thinking of doing some bulk cooking for the freezer. We'll see how the mood strikes me in the morning.

    Sunday - Jalapeno Popper Burgers with roasted potatoes - supposed to be in the 80s here

    Monday - Spicy Red Beans and Rice with salad

    Tuesday - Quick Chicken Cordon Bleu with vegies and gnocchi from freezer

    Wednesday - Spinach-Artichoke Cheesy Tortellini with salad

    Thursday - Baked tacos with rice and beans.

    Friday - leftovers!

    Monday: Beef, Beet and Cabbage Soup (Crock Pot and Ww)
    Tuesday: pizza night
    Wednesday: rice noodles w/tofu
    Thursday: Tamarind Chicken With Bean Sprouts & Mushrooms
    Friday: fish/salad

    Hey there--been out since Spring Break. Had fun in FL. Easter was cold and rainy. Still waiting on spring weather.

    The plan--Mon-Fri:
    Monday: Slow-Simmered Spaghetti Sauce over spaghetti, salad, bread

    Tuesday: baseball game night--Stuffed Zucchini, steamed carrots, and roasted brussels sprouts

    Wednesday: Crock Pot Whole Chicken, Southern Green Beans and Potatoes and salad

    Thursday: Chicken Enchiladas, Mexican Rice and steamed broccoli

    Friday: baseball game night--Springtime Grilled Salmon, grilled veggies and salad w/ Lime Tea

    Work Lunches: Spring Minestrone w/ Light Whole Wheat Bread (Bread Machine) and Cajun Potato Salad

    Breakfast: Apple Jack Breakfast Wraps

    Snacks: Mexican Spirals

    Red Beans and Rice, Salmon, Mac and Cheese and stuffed zucchini all sound delicious.

    This week I am really trying to use up stuff. I have lots of stuff to use.

    Boy oh boy - other than Sun (Easter), not 1 meal got made this week. My son, friends to the airport, a good friend rushed to the hospital, work, etc - you name it, it happened.
    Well, this week is all about catch up; also, using up stuff I have on hand.
    I actually have links this week, but f.com won't let me access my own recipes ... go figure. If interested and can access, I have the trout recipe, pasta primavera, pesto pasta, and gwumpkies.

    SAT ...
    BBQ that I thought was last weekend is really this weekend. So, it was a bought ticket (golf tournament for a local soccer league). My son played for years, so I still try to support them. It is catered from a local BBQ place, so, chicken, baked beans, corn on the cob, slaw, rolls, dessert, etc. Just drive through and pkup. Perfect, heat and eat, lol.

    SUN ...
    Lady #4: Off to Atlanta with family for 1 wk
    Me: Shrimp cakes with a peach salsa (new recipe); creamy cucumber salad (using up a dill sour cream dressing); parsley potatoes

    MON ...
    Lady #1: Ham, potatato, and bean soup (no real recipe - I'm raiding her fridge, so it is whatever I can find); what bread ABM; garden salad
    Lady #2: Roast lemon chicken over barley with sauteed kale - she has a new recipe she wants me to try
    Me: Leftover pasta primavera (from Fri) topped with smoked chicken (freezer stash); fresh fruit or salad

    TUES ...
    Whole grilled trout w/lemon caper sauce; brown rice; corn on the cob

    WED ...
    Ladies #1 and #2: Pesto Pasta Salad with Blackened Chicken; fresh fruit; crusty baguettes
    Me: Reuben sandwiches; chips and a pickle

    THURS ...
    Out - Happy hour w/friends, probably eat there; if not ... I have 3-4 containers of soup in the freezer, pot pies, or lasagna - I won't go hungry

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD - maybe gwumpkies, pierogies, steamed carrots, and Makowiec (a poppyseed polish dessert)
    Me: Work dinner w/potential client, out somewhere - their choice

    Well, I learned a new word today: gwumpkies. Thanks, SC! We are finally having spring here. I went to the first day of the farmers market today --- not much produce yet, but lots of plant starts and baby greens, along with the local meats, eggs, and dairy. Still, you could tell the whole town was just ready to enjoy nice weather.

    I am keeping things ultra easy this week so that I can take some time off to get my garden going,

    Sat - leftover noodles with jarred sauce, frozen veg, and fish
    Sun - burgers on the grill with potatoes and broccoli
    Mon - Pumpkin-Black Bean Soup (made and froze two weeks ago), with Yeasted Cornbread also from freezer
    Tue - sausage lasagne (made and froze eons ago)
    Wed - Chicken with Black Beans and Rice
    Thu - chick peas, spinach, and goat cheese in tortillas ("banzodillas?)
    Fri - leftovers from Tue

    There are many spellings and names for it. MCV, But stuffed cabbage rolls with beef, rice, tomato sauce, etc.
    Pretty basic, but always delicious. I love them. Grandma used to make them and we all love them. Usually with a potato pierogie on the side. And no polish on either side of the family, but my grandma used to watch a neighbor girl growing up and they were polish. She got many good recipes from them.

    Hi everyone! Sorry I didn't get a menu posted. My son and dil had a beautiful baby boy last Thursday and I have been giving them a hand. I think they are pretty organized and will do fine but I will go help them if they need it. Nice to have some cuddle time with baby Owen. I am just making a pot of soup to take them.
