    Stuffed Potatoes

    The humble potato can be turned into literally a meal on its own so easily, you can just split them open and add topping such as Cheese, Chilli con carne, Tuna and Cheese - the choice goes on and on.

    There is something nice and different when you do stuffed potatoes, so easy and simply hundreds of different ideas as well



    Classic Stuffed Twice Baked Potatoes
    Potatoes Stuffed With Ham and Gruyere
    Ww Ham and Cheese Stuffed Potatoes-7 Points
    Mushroom-Onion
    Saute 2 cups sliced mushrooms in olive oil until soft; add chopped dill and salt. Spoon onto the potatoes; top with the onion, sour cream and more dill.

    Here are a few quick and easy ideas.

    French Onion
    Cook 1 onion as for Caramelized Onion Stuffed Potatoes (No. 1). Scoop the flesh out of 4 baked potatoes and mash with the onion, 1/4 cup beef broth and 1/2 cup shredded gruyère. Stuff into the skins, top with more cheese and broil to melt.

    Cheddar-Chive
    Scoop the flesh out of 4 baked potatoes; mash with 1/4 cup each butter, sour cream and chopped chives, and 2/3 cup grated cheddar. Stuff into the skins; top with more cheese and broil to melt.

    Sloppy Joe
    Saute 1 chopped onion and 1 bell pepper in olive oil; add 1 pound ground beef and brown. Add 1 cup each tomato sauce and water, 1 tablespoon each brown sugar and cider vinegar, and 1 teaspoon cumin; simmer until thick. Spoon onto baked potatoes.

    Bacon and Egg
    Top each baked potato with butter, 2 slices cooked bacon and a fried egg. Season with salt and pepper.

    I made these stuffed potatoes just this morning, I sauteed some diced onion, capsicum and celery in olive oil for a minute or two. Added this to the scooped out potato that I had mashed up and tossed in about a cup of ham diced up small. Piled it into the skins and have topped it with a little grated cheddar cheese - ready to go into the microwave for Dinner tonight to serve with a nice barbecue.

    Yes, they are tiny new potatoes. I go to a farmer's market where I can hand select the potatoes to be sure I get them all close to the same size.

    We were being inundated with kale last month, so I made up Stuffed Potatoes With Kale and Red Pepper. This freezes well, so you can keep the extras for later.
