    Hi dear Jan,
    I'm really sorry about the pancakes and thanks a lot for specifing the problem so exactly. This will help me to make the corrections.
    I checked more Vietnamese pancakes recipes and I found out that the proportions of flour and liquid are not very different form mine, the general preceeding (pooring batter over over meat and shrimps) is one of the variants, but I forgot to mention that the pancakes have to be cooked in 4 portions and not at once. I will correct this in the recipe.

    I can imagine, that coconut milk differs a lot the more fat ones could be a problem.
    There are different kind of rice flour: the regular rice flour and the sweet rice flour (=glutinous rice flour, made from sticky rice).
    I think that as I prepared my pancakes I was lucky as I had the right flour: regular white rice flour not the glutinous one as for mochi. I will specify this in the recipe as I think that is very important.

    Tonight for dinner we enjoyed JustJanS Chicken and Sweetcorn Fritters #189793.
    Served with a light salad and some coleslaw on the side.
