    I am a food writer doing a story for Associated Press about West African Jollof and was hoping there might be someone in the forums who is familiar with the dish and would like to talk about it.

    Hello, Michele!

    Jollof is a rice dish with as many variations as there are cooks! To be truthful I am not familiar with it, as I am in South Africa and it is a dish of West Africa and to an extent Central Africa. It is also a dish which could be classed as a typical "dish of poverty" -- its basis is rice, and depending on what can be afforded, ingredients are added. So it can be very simple, with tomato and hot peppers/chillies, or far more elaborate.

    If it will help ... I am sure you're familiar with African geography, but have a look at the map of Africa which is posted on this forum as a Sticky.

    If you put jollof in the Google search line a lot of recipes and information come up.

    Zuri, this is so helpful. Thanks very much. I have made progress in talking with people and am learning alot. At the moment, I'm trying to figure out whether anyone in fine dining has caught on to joloff -- when a dish goes upscale, that's when the rest of the world suddenly hears about it.
