    How to Spatchcock a Chicken
    And use a Cajun Spice Mix to
    season it with.

    We have leftover Jamaican Jerk Pork and fresh pineapple chicken and assorted sides. Momma's gonna go get her Monday night Zumba on after work, so it's a fend for yourself night here. icon_wink.gif

    A chicken breast, turkey tenderloin and ground chuck all are in my fridge...... And no, this isn't the start of a joke. icon_biggrin.gif
    I have no idea what to make with either one of them. Leaning toward the turkey tenderloin with mashed potatoes and a veggie or salad.
    We will be definitely having spaghetti this week, I think. OY VAY.
    To top it all off, I really feel like having fish instead of any of the above. rotfl.gif

    What a neat way to cook a chicken. I love your pictures, too. The one with it cut up on the plate with gravy was TDF. I saved this recipe, and am thinking of summertime to put it on the grill. MMMMMMMM. icon_biggrin.gif

    Had the first of 3 dental surgeries this am. They were supposed to be last week. NOT a happy camper.

    Because of the change, I had to change my meals up a bit. And, all 4 of my ladies have family in town; so, no cooking.

    Me: easy tonight; my mouth hurts like hell right now! Pot pie, in the freezer, I made a bunch on individual ones. Fruit maybe, mango I think.
