    Up at 3am to start making soup for the shelter with 4 of my friends. The 5 of us do this 4x/yr. We do this vs donating during the holidays.

    We made about 22 gallons soup / for 200 or so people. We also got all the rolls donated, Got discounted veggies from 2 local stores; and made carrot cake cookies. The salad we did tomatoes, a mix of greens, cucumber, onion, carrots, and croutons with a mustard vinaigrette.

    The soup was potato, bacon, ham, veggies, in a light cream broth. Luckily the weather cooperated and we were able to use our turkey fryers. 5 hours later, we were done. The soup, salad, dessert and rolls were delivered this am for lunch, dinner, etc.

    Me: I'm tired after my catered dinner last night. So what I didn't have last night. Calzones (already made), with chicken, peppers and served with marinara; and a salad. Keep it simple tonight.

    It's a PAC weekend. icon_wink.gif Easiest Chicken Enchilada Bake E-V-E-R served with taco toppings (olives, tomatoes, onion, sour cream, etc.) Salad as a side.

    Taking DD#1 back to college after spring break so I will be eating on the run. Probably Arby's since that is where she ALWAYS wants to eat! icon_rolleyes.gif

    Going to have Ice Dream cake for my grandsons 15th birthday at 2 this afternoon. I doubt we'll be hungry for dinner. So maybe soup and sandwich.

    Stuffed Cabbage Leaves in the crock pot w/a huge salad

    Slow Cooker Cabbage Roll Casserole is what I ended up making. DELISH!!

    I am trying Company Pork Roast. I had programmed my oven to come on while we were at hockey, but something went wrong and I don't think it turned on as early as it should have. It is now 6:30 and it isn't quite done yet. I'm starving! icon_cry.gif

    We had a feast at the inlaws!

    Rib steaks, fried chicken, baked potatoes with every imaginable topping, an assortment of roasted vegetables (peppers, asparagus, carrots, onions and mushrooms).
    Our Great niece is pregnant and had an ultrasound on Friday. We were dying to find out the gender. There hasn't been a girl baby in DH's family for 3 generations.

    She said she'd tell us after dessert which was to be our B-day cake. I cut through the icing to discover a pink cake! The curse has been broken! icon_lol.gif

    I've been eating heavy gut buster meals lately so I just boiled a pound of ginormous shrimp and they are chilling in ice water to get good and cold. Making an extra spicy horseradish cocktail sauce for dipping.

    No vegetables but for an appetizer I'm having some canned smoked oysters with cheese on wheat crackers. Wheat crackers count as a vegetable, right?

    Shut up and humor me.

    What a cute way to tell everyone the sex of the baby! I have a feeling this little girl is going to be spoiled just a tad.
