    Sides for Beef Shoulder

    Brain dead this morning. Planning Sunday dinner and looking for some different sides that Mashed Potatos and Mac & Cheese. Planning on a Hormel peppercorn Beef Shoulder Filet for the meat. Any ideas also any thoughts for a dessert. Too early this morning to be creative.

    I made a couple of barley based sides recently, a nice change from potatoes or rice

    Lemon-Parmesan Barley
    Barley Risotto With Swiss Chard, Radishes and Preserved Lemon
    Greek Chicken and Barley Salad - I omitted the chicken

    For that special beef shoulder fillet, I would make a healthy dish like these:

    A good spinach salad with strawberries and balsamic dressing,
    Stuffed tomatoes with low-fat creamed spinach and bread crumbs on top,
    A good tomato pudding,
    A good broccoli and cauliflower salad with light Ranch or Vinaigrette dressing,
    A good cauliflower (or broccoli) au gratin.

    The tomato pudding sounds really good!

    Ever just cut them in half, sprinkle w/parmesan and broil???

    I JUST made bread pudding using some hard baguette I had from the other day. EXCELLENT.

    Lemon Parmesan sounds good. I have stuffed tomatoes before but right now our stores they don't have much taste. Never heard of a tomato pudding so will check for some recipes. Thanks
