    Hello.

    I was thinking today that I would like to go on an in depth cooking journey, one that may take years to complete.

    What I would like to do is to record every SINGLE country (for bonus points, when possible, ancient civilizations as well) and research each countries national dish, or failing that a popular dish from that area and then have that recipe recorded here to cook, photograph and review.

    Naturally I would love it for everyone here to join and and help enjoy the experiance. There will be no commitment nesessary.

    What I would like to happen is that I will set up a proper thread with a list of all countries past and present, allowing for a few receipes to be submitted for each. Recipes can be submitted from anywhere! They can be pre-existing on the site, or specially uploaded just for this occassion. I would encourage you to upload your own recipes so that I can review them for you.

    If you have the history of a recipe, include it in the description, I want my brain to benefit from this as well as my stomach.

    I'll then create a cookbook to save everything into. I invite everyone to review and photograph and we'll share our adventures and findings.

    You could either go alphabetically, regionally, or perhaps, tie you visit to a significant date, such as an independence day. I like the Independence idea because it really leads to the research into the history. Also, there are typical dishes and celebratory foods.

    Becky Robins is doing 258 countries and 1 each Thursday. She started Aug 2011 and is up to the E's. She estimates it will take 5 years. I was thinking I would like to blog about it also.

    I find it fascinating!! My husband does all cooking for our family. I used to love cooking and baking. Now I love reading recipes from everywhere.

    It's going to be a huge job. Susie and I are working on an outline to make this a proper event, hopefully to start at the end of PAC, so keep some notes for when the official thread opens up. I'm hoping to do 3 recipes a month, we'll take a break for ZWT so that we don't clash.

    I'm trying to set it up so that you can play as much or as little as you like. I'm also doing some preliminary research for when the thread opens up, we'll have places to start looking.

    I've come across at least 6 bloggers doing this. According to the UN, they currently recognize 195 countries, I think.

    I started in Africa and there are 54 countries. I'm looking for typical recipes that are easily adapted to American cooking. So far:

    Algerian Couscous
    Muamba De Galinha (Angolan Chicken Stew)
    Seswaa (Stewed Beef of Botswana)
    Lamb Stewed in Peanut Sauce(Benin)
    Riz Gras With Salmon (Burkina Faso)

    Am I in the ballpark?

    That's all looking good, I'm hoping to go alphabetically so that we get a bit of variety each month. Keep all of these recipes handy so I can record them as suggestions for each country.
