    Kimchi uses

    Now that I'm fermenting veggies like crazy, I have a huge amount of spicy nappa cabbage kimchi to use. I do have one recipe for Korean kimchi pancakes, does anyone have any other interesting uses for the stuff? Ideas need not be Asian, though.

    Hi Zeldaz, and welcome to Asia. I have Chinese friends who plop a goodly amount of red hot kimchi into their congee. It evidently adds the needed heat they're after in this particular soup.

    Many, many uses. Think of it like other fermented foods such as cheeses, etc.

    Use in ramen (kimchi ramen), kimchi yaki soba or stir fried noodles, kimchi udon yaki (stir fried udon noodles), my favorite - kimchi fried rice, with scrambled eggs (minced) or in hotpots or soups like this chigae: Can't Be Korean Soon to Be Soup (A Play on Sundubu Soup)

    think of kimchi as in hot sauce, salsa, etc and their uses. Kimchi is used like that as well.

    This sort of answers your question. Here's a recipe for Spicy Ginger Kraut, or Midwestern Kimchi - kimchi made with regular cabbage. It goes without saying, but it makes excellent kimchi bacon fried rice. The Midwestern Kimchi is on my blog:

    I have to admit that I love kimchi but I don't eat it as much as I could wish for. icon_wink.gif
