    Metal vs Glass Pans

    I have a cheesecake recipe I've made several times in a glass dish. To make a larger cake, I'd like to use a metal baking sheet.
    The glass dish recipe calls for 350 degrees for 30 minutes. I'm thinking I should use 375 degrees for 30 minutes with the metal pan. IS THIS CORRECT? icon_confused.gif

    General rule of thumb for using pyrex/glass baking pans is to reduce the temperature listed in the recipe by 25 degrees.

    However, cheesecakes are "different".
    I'm guessing you want to make this in a rectangular pan and not a round springform pan. (Because of the shape, cheesecakes bake more evenly in round pans). That said, knowing what the recipe is (and the size of the pan) would be helpful, as some cheesecake recipes do not double well (the middle doesn't bake/set properly without over baking the sides and corners). icon_confused.gif

    Thanks for the info! It's a recipe using cream cheese, sugar, vanilla, butter, cinnamon and crescent rolls. The crust is made from the crescent rolls; filling from cream cheese, sugar, and vanilla; then I mix butter, sugar, and cinnamon together to spread over the top.

    Instead of using my 9x13 glass pan, I'd like to make a bigger "sheet" cake, using the same ingredients, but making it on a larger scale. If I double the recipe and use the metal "sheet" pan (with raised sides), do you not think it would work, with a 375 degree oven???

    After checking 20 similar recipes (all baked in a 9 x 13 pan) with a crescent roll "crust", 18 of the recipes use a 350F temperature for 30 min, which means if you are using glass instead of metal, it should have been baked at 325F. The other two recipes use a 325F temperature for 30-40 min with a metal pan.

    I don't think raising the temp above 350F (unless your oven runs cold) is a good idea. As for increasing the pan size, I think you would get better results by making two cheesecakes instead of trying to bake one large one.
    If you really want to bake one large one, at a higher temperature, you run the risk of having the sides and corners overcooked, and the middle not quite done. Baking at a higher temperature also increases the chance of the cheesecake forming cracks. icon_confused.gif

    My original recipe says to use a 9x13 glass pan, 350 degrees, for 30 minutes.

    I think I'll try the metal pan and bake at 325 for 30 minutes. I'll let you know how it turns out.
