    You'll be happiest with the results if you follow the recipe as written. Baking is rather a science and if you tinker with a recipe too much (i.e., making a regular cake recipe gluten free), you're apt to have a failure.

    There's also a gluten-free forum, you might get some information from the GF bakers there, ass well.

    Substitute a gluten-free flour mix that includes xanthan gum for wheat flour. If your mix does not include xanthan gum, the recipes says to add 2 teaspoons.

    It also adds some gluten-free baking powder to help with the rise.
