    Vinegar In Curries

    Vinegar, specially in curries sharpens the flavor and seems to enhance the overall taste.

    Not so much that it makes the whole dish taste sour, just a little. It's like adding lemon juice to brighten the flavors of a dish; but you only need to add a little because of the strength.
