One of the most refreshing side dishes my mom ever served was a simple bowl of sliced cucumbers in a little rice wine vinegar. I still like to make these to snack on once in a while, even though I'm the only one that will eat them in my family.
There are several recipes posted here for cukes and vinegar, but none of them use rice wine vinegar. I don't know where mom got the idea for that combination, but it's how I do them now too. The apple cider vinegar and kicked up white vinegar recipes are ones I plan to try this summer.
I like to use a veggie peeler to peel off thin strips around the cucumber, leaving an alternating thin strip of peel for color.
