Menu for Week of March 2 through March 8, 2013

Hi menu peeps!!! How is everyone? I've had a hectic week. Well, maybe it wasn't so hectic, but it felt like it cuz I've had a doozy of a cold. Yech!!
One night I just wasn't up to cooking or eating, so the menfolk went out for hamburgers and I had a cup of noodles.  So that night's meal will hit this week's menu.
So here's my menu for this coming week. Share yours!!!
Saturday - Bulgolgi with rice and vegies
Sunday - Creamy Tomato Basil Tortellini Soup with some sort of panini
Monday - Baked tacos, rice and beans
Tuesday - Tomatillo Posole with tortillas
Wednesday - To Die for Crock Pot Roast with mashed potatoes and green beans
Thursday - Chili's Copycat Cajun Chicken Pasta with salad and bread
Friday - room for stretch!

Morning C -
Well, last week changed a bit, but not too bad - I had to change a few things around. Still on my KICK of using stuff on hand. Spent $40 at the grocery, but mostly cat stuff, milk, cheese, eggs, etc. The rest I'm using is what I already have. C - feel better, sorry you are under the weather.

Beef and sausage chili, (a throw together no recipe), topped with cheese, sour cream, etc; home made tortilla chips; and salad
SUN ...
Lady #4: 3 meals to be delivered Mon am
1- Grilled swordfish kabobs w/lemon; on the side, mushroom, onion, and tomato skewers w/feta vinaigrette; jasmine scallion rice; lemon cake
2- Pork stew w/sweet potatoes, rutabagas, celery root, parsnips, bacon, and a rich beef/tomato broth; salad with a roasted garlic dressing
3- Pulled chicken, in BBQ for tacos; a apple pear slaw; red peppers and onions, and spicy cream sauce; black beans; yellow rice
Me: Creamy mushroom and tomato pork tenderloin crock pot; egg noodles, roasted broccoli and cauliflower
MON ...
Ladies #1 and #2: Classic chicken parmesan over spaghetti; ceasar salad; garlic bread; olive tray
Me: Work - taking leftover chili
TUES ...
Scalloped potatoes w/ham; peas; tomato slices
Wed ...
Ladies #1 and #2 w/friends: Scalloped potatoes w/ham and cheese; peas; and roasted tomatoes on the side; brownies w/ice cream and caramel sauce
Me: Out w/friend
THURS ...
Lady #3: Veal parmesan served over angle hair pasta; classic caesar, garlic bread, olive tray
Me: Grilled chicken quarters w/apple BBQ sauce; sauteed snow peas and carrots; roasted potato wedges
FRI ...
Ladies #1 and #2: Church get-together
Me: Out or leftovers with poker buddies. I should have a few leftovers and freezer soup. I could also make sandwiches with leftover chicken as well. It is a CORN (clean out refrigerator/freezer night)!

Sorry, but no recipe links this week. Since I have been trying to use what is on hand; I can't really make a recipe accurately since I'm not buying anything; so most of my recipes are simply thrown together. The only recipes I am using are my own which are NOT posted. Sorry.
C - I love the possole, sounds good. I love tomatillos.

C - question. I see the TDF pot roast. Do you do anything when you make it? I did make it and cut a lot of the packets in half and it was still too salty/artificial for me. The meat was tender and the taste was OK. I was just curious. I so wanted to love it and just didn't. I read many of the review; and I did give it a decent review because my friends enjoyed it. Just curious as to how you made it if you don't mind sharing.

I like the recipe, although I don't make it a lot. I use a lot more meat than the recipe calls for. But I don't think it's too salty. At least I don't remember thinking so. Maybe I did cut the ranch mix down. I'll let you know after I make it again.

C- I hope you are feeling better. I also feel like it was a hectic week, but I am off to a great start today because the grocery shopping is done and put away, and the weather is uninviting so I am going to get a head start on some cooking!
SC- I know how it goes with recipes and using stuff up -- I don't end up doing many reviews because by the time something makes it to the table, it's only vaguely similar to the recipe!
Sat – Chicken Chasseur with rest of no-knead bread that I actually managed to make last week! It is yummy with a nice hint of sourdough.
Sun – Peruvian Anticuchos except just using stew meat (no hearts this time), with cooked greens and brown rice
Mon – Artichoke, Potato, and Portabella Casserole (will sub quinoa mixed w/egg for the potato to improve the nutrition)
Tue – Salmon and Snow Pea Stir Fry with rest of rice from Sun (I always cook at least 2x what is needed, for energy/time savings and b/c the rice cooker just works better when closer to full capacity)
Wed – leftovers from Mon
Thu – African Chicken in Spicy Red Sauce, Authentic Injera (aka Ethiopian Flat Bread) (trying again), green beans
Fri – my birthday – maybe takeout Thai

Morning to all. Glad last week is over. Daughter's basketball team was out in the first round, son's team out in the second round. So basketball is officially over. Now on to baseball and only my son is playing. Daughter want's to focus on swimming.
Here is the plan for Mon-Fri:
Monday: baseball game night-- Chicken Stir-Fry over rice, and egg rolls
Tuesday: Cajun Chili, cornbread and salad
Wednesday: Spicy Country-Fried Steaks, mashed potatoes, steamed broccoli, Pumpkin Cream Cheese Pie
Thursday: baseball game night-- Garlic Pasta With Marinara Sauce, bread sticks, and salad
Friday: Balsamic Tuna, roasted asparagus, baked sweet potato; White Chocolate Mocha Supreme
Work Lunches: Hot and Sour Soup w/ crusty bread and Baked Potato Salad
Breakfast: Fried Egg Sandwiches
Snacks: Toffee Almond Sandies
Drop off meal for friend w/ NHL (last one as she is doing great and treatments are over): Company Pork Roast, Spicy Sweet Potatoes, and Gooey Butter Cake
