    The Classic Vinaigrette

    Sometimes a classic salad is just what you need. Mastering a perfect vinaigrette is easy. If you have never made one start "simple". The simplest contains extra virgin olive oil, wine vinegar, salt and pepper, whisked together in the proper proportions so that it is pleasantly tart but allowing the flavor of the oil to shine. As well, your lettuce leaves should be glistening, not drowning.

    Once you have mastered a basic vinaigrette, it's time to play. Try adding a little minced garlic and a dab of mustard, or a splash of meyer lemon juice. Slivered leeks are a lovely addition as well.

    I often just wing it, especially once the fresh herbs start coming up in the garden. I have found one bottled one I find acceptable and low sodium, which is rarely the case. But the one I've made the most often lately is the one on this recipe - I use it on greens, not just with the potatoes this recipes calls for -
