The bread sounds a bit like pita bread. What I gather is that a hot oven may be key to getting a pocket to develop - you might try raising the oven temperature to 450 or 500, and baking them on a pizza stone instead of on a baking pan. If you are using a cookie sheet, let it heat up in the oven so that the bread hits a hot surface.
I've never actually made pita bread - don't know why, I just haven't - but if you do develop the recipe to a point you are happy with it, I hope you post it here. I think the hatchmarks on it are very attractive. I will have to see if I can find a Bosnian restaurant somewhere close to me, to try this out.
Please let us know whether this works out for you. I did post in the Eastern European forum, but with the holidays people might not be dropping in as often. Perhaps we will be lucky and get advice from an expert lepinja baker!
