    Last summer's berries in the freezer...

    It is usually around this time of the year when I realise I still have a LOT of frozen berries in the freezer - I "save" them in the autumn, thinking I'll run out before Christmas, and then invariably find myself in a hurry to use them up before the new season rolls along. icon_lol.gif So, this weekend it's Oven Pancake with assorted berries and a strawberry cream cake!

    I have been using frozen berries and bananas to make smoothies - I just blend them with kefir - I make my own - and honey, It's very refreshing and, of course, all the health benefits of kefir. I also throw in a bit of turmeric and cinnamon for their health benefits, as well.

    Just came across a small feature article on this very problem; in addition to suggesting the classic berry and sour cream pies, there was an absolute gem of a recipe idea... Blackcurrants in brownies! icon_biggrin.gif Make your favourite brownie recipe, top with a cup or two of frozen blackcurrants, bake. I can't believe it's never occurred to me to add currants to brownies, even though I loooove chocolate-cassis anything!!
