Not exactly professional! icon_lol.gif I have so many tomatoes that I had to invent something! Could not find what I wanted on site.

This small terrine (just a salad-y side for me and DH tonight) is a bit too Technicolour, but the tomatoes really are bright red! It's all held together with gelatine, melted in juice from the tomatoes, mixed with a little ketchup and water. The white part is smoked mozzarella slices. The tomatoes were peeled and sliced, and I halved the small yellow plums.

Thanks, Chef S, you are kind to me! I did not mean to photograph this, but my sister said over the phone that she's overrun with tomatoes, and would I send her a photo so she can imitate it ...

That's how it landed up here, too! rotfl.gif

Oh Deb, you're just being kind! icon_lol.gif

I forgot to say: I also have fresh basil by the barrow-load -- can't possibly make use of it all, sadly.

So there were 2 layers of fresh basil leaves in there. And by the way, I tasted it after the photo was taken, and it had a lovely fresh taste. Having stayed in the fridge overnight must have improved the flavours. I adore fresh tomatoes.

I think it looks amazing. Fresh flavors, bright colors which I love; and, I am sure the flavor is amazing.
