Newbie "Fry Cook" Poster
I am looking for recipes for Fridays during lent. My family doesn't eat meat on these days.
Could use really good recipes for fish (not fishy) and veggie pasta.

Fresh fish that has not been frozen, does not smell or taste fishy.
When you order at the fish counter, ask to smell it. It should not have a strong fish odor.
Keep in mind, the darker portion of a piece of fish generally is stronger tasting. Some fish are milder in taste as well.
Why not consider non-meat meal. You don't have to always serve fish.

Tilapia is a great fish to start with; it is very bland and basically an open canvas. It is firm so it isn't prone to falling apart, very inexpensive, and thin enough to make it quick cooking.
I simply make 3 stations:
flour seasoned with salt, pepper, and any seafood seasoning, I use Old Bay
Second, beaten eggs with a little dijon mustard
Third, Italian bread crumbs
Dip the fish (patted dry) in the flour, shake off excess
Dip in the egg; then the bread crumbs
Saute in a mix of butter and oil until brown on one side, flip and brown the other side.
For tilapia, about 3 minutes per side.

It is a basic easy method and always comes out good.
ONE NOTE:
Over cooking fish can cause it to taste fishy, most people do NOT realize this. They think they have to cook it to death. You don't want it raw, but you don't want it over cooked either.

You can make a fish pot pie. Add salmon to a fritatta; fish stew is fantastic. Then there are fish cakes, not just salmon or crab. You can add potatoes and veggies too.
Catfish nuggets are easy and pan fried; tossed with flour and corn meal and crispy brown. Serve with a remoulade sauce.
Any of these can be adapted to what you can eat.
Fish tacos is also a fun way to incorporate fish into your diet
