I've got to say I'm really perplexed by this brouhaha. If the recipe was for, say, egg rolls, and suggested garnishing with ketchup, and a Chinese person posted to say they didn't combine egg rolls and ketchup in their culture, would they be accused of being food police? Yes, there would undoubtedly be some Chinese people who would eat ketchup with egg rolls, but no one would demand they be counted, and no one would say that anyone who wanted to do so would not be allowed to have it. If it's a cultural thing, not food police!

EVERY ethnic food has people who “know” more about what’s “Authentic” than the next guy

Chicken Parmigiano isn’t REALLY an Italian Dish, it’s AMERICAN… it’s not? Who says?

Who says that NOWHERE at NO TIME in Italy did some person not decide to take that chicken cutlet and throw some gravy and extra cheese on it and toss it back in the oven to heat it up?

If you’re going to get THAT nit picky then I guess tomato sauce, gravy, spaghetti sauce.. whatever you want to call it isn’t REALLY Italian either, because it wasn’t eaten in Italy until the 1600’s… right? right?

You missed the point.

One person cannot define a cuisine.
As for the egg roll, an egg roll with ketchup on it is still an egg roll.
Chili with beans in it is still chili.
And Mexican chocolate served with whipped cream is still Mexican chocolate.
In cooking, there is no my way or the highway, except with the food police.
That's what my brouhaha is about. One Mexican cannot speak for all Mexicans.
Just as a member of Food.com, I would be out of line if I said something like "We Food.com members never make a recipe that ______".

Unless you think I have the right to speak for you and everyone else here. Would there be a brouhaha if I did?

Food police pop up everywhere. I have posted a recipe for grits the way I like them. Made with milk. I got a review criticizing the recipe because that's not how anyone in the South would make them. Well 1. I did not post it as a Southern recipe; 2. I like it with milk in it; and 3. I like it with jam. It's my recipe, don't make it if you lack the imagination to think beyond your little Southern box.

Similarly I once made a cake because of reading a review that said the no one would put an apple filling in it in South America - seriously, not one of the millions of Latin American housewives ever thought to do this??? It was delicious.
