Out for lunch today so I won't be very hungry. I made an extra Pot Pie the other day so Don will have that. I have odds and ends to nibble on should I get peckish. I guess its a CORN night.

Two early Vday dinners.
One for Ladies #1 and #2 and their SO's. They have a dinner in their complex tomorrow night.
- Steak w/green peppercorn sauce
- Duchess potatoes w/truffle oil
- Baby greens, champagne vinaigrette; topped with roasted asparagus, poached egg, and hollandaise
- Strawberry shortcake and B&B cocktails

Me and a Friend: His parents own a seafood market in the Pacific NW, and each year send a box of salmon, king crab and a few other things. Well, his wife wasn't able to make it back from Iraq; so, he is going to share with me, as long as I cook. He is working tomorrow night, so as long as FEDEX is on time today ... the seafood should arrive shortly.
- Crab legs steamed with a lemon garlic butter
- Cedar planked salmon with a brown sugar, bourbon glaze
- Baked spud with the normal toppings (sour cream, bacon, chives, butter)
- Grilled romaine with a lemon vinaigrette
- Dessert, just berries if any for me; but I will send my friend home with strawberry shortcake.

I'm thinking something vegetarian. I did not use my Mexican squashes last night, so I'll be using those and some roasted green chiles tonight.

Oven baked breaded pork chops, not sure on the coating yet. Will know when I actually get in the kitchen later and start throwing things together. Garlic mashed potatoes, and some sort of veggie.
Still feeling like crud, but I have the desire to cook and eat again. DH now is sick, so we will see how this will play out. I DO NOT want this back. UGH.

What I didn't make last night...TWA Spaghetti & Meatballs and salad.
I went in the kitchen to start and saw all the left overs we had to still use and decided we're doing a buffet of left overs. DH wasn't thrilled but oh well. Didn't get his sweet thing made either  maybe today I will find the inspiration to make it.

OOPS forgot it was Ash Wednesday - no meat. So, went to the freezer, and took out some salmon. I just may make a salad to put the salmon on top of. Not sure. Will have to nap on that one.

Hubby and I are what you would call "Lapsed Catholics" but I still observe Lent...so I'm trying to figure out what to make for dinner
(if DD goes out with her father, we may just grab a bite out to eat)

I have canned salmon.... Salmon patties for dinner, with stewed tomatoes and probably some sort potato
(off to find a good salmon patty recipe!)

You could stuff the poblanos with a mixture of calabacitas, potato and cheese. Bake them with a ranchero sauce on top.
