    Roasted red potatoes, onions & peppers with sausage. It's quick, easy, and everybody loves it.

    Easy day

    Working from home; a late lunch with a friend; then, probably cheese/crackers, fruit for a light snack vs dinner before heading in to work at midnight.

    I love manicotti

    Do you make a crepe for the shell or do you use the boil noodles that you fill?

    My mom always made them with a crepe batter like shell… Love the spinach and mushroom idea… with béchamel sauce? Both red and white sauces?

    (I’m asking lots of questions today…LOL)

    I decided to try Michele Scicolone’s Italian Slow Cooker recipe for Chicken with Rosemary and Garlic
    Only I’m just using legs, she uses a whole chicken

    Side dish???

    I have orzo, I have some feta, I found some fresh oregano and I have a thing of frozen spinach and shredded carrots, and some red and green peppers (I think I even have sun dried tomatoes) so that’ll get thrown together as a starch/veggie combo

    (I’m totally going through my pantry and fridge as I type figuring out this side dish)

    It's Mardi Gras! So I will make either Easy Cajun Shrimp With Corn Flapjacks or a Cajun Shrimp Scampi Pasta, with salad of course!

    I use the manicotti shells for hearty fillings such as meat; but lately, I have been using wonton wrappers. It's more like a cannelloni, but I like the softness better and it isn't as doughy. I have been using these with a lot of the same fillings I use for manicotti. They work really well.

    Spaghetti Ala Elsa. I've been hungry for it ever since I posted in the TOTM forum about it. With a salad and maybe some garlic bread, not sure.

    Hey, I finally clued in...I got some sausages yesterday at a great deal, and that is now my dinner plan. Italian Sausage Casserole, I'll be sure to review it later.

    I made pernil for medienoche sandwiches and have lots left, I will either make enchiladas, taquitos or burritos, leaning towards taquitos.
