    Catfish Cakes, Parsley Potatoes, and Lima Beans

    These are so easy and delicious. (sorry, recipe on another site)
    You can really use any white fish, but a fish similar to catfish in texture works best. The cakes are mostly FISH, not filler. A nice mix of fresh lemon, herbs, saltines (yes crackers), egg; and tonight ... I used scallions vs chives. I mixed yogurt, horseradish, lemon, and mustard for the sauce for something a bit easier.

    Spuds ... basically parsley, buttered spuds, but I do them in the microwave, 5 minutes and done.

    Now that looks like the best fish cakes I've seen, and I like your description of how you made them. The photos are great -- love the last plate!
