    i notice people using cornflakes. Cornflakes contains barley which is wheat and not acceptable for wheat free diet

    Barley is not wheat, it is a very different grain. Barley is one of the grains that bear gluten.
    Many brands of cornflakes are gluten-free. Kelloggs uses malt flavoring in their cornflakes, and malt flavoring is made from barley. Check the label to be sure, but gluten-free cornflakes are on the market.

    There are no cornflakes in the recipe itself.

    One of the reviewers mentioned cornflake crumbs, which I wouldn't associate with shortbread. icon_confused.gif

    True, most mainstream cornflakes are not gluten-free, but there are many brands of gluten-free cornflakes available also... It Is what it always is: if it is a GF recipe, you presume the ingredients must be gluten free also ..
