Baked Sweet Potatoes and ???

I got really hungry reading about the Feb. topic on sweet potatoes. But I can't really decide what meat to make with them. They really don't stand up to fish (in my opinion, anyway) and we had pork roast this past week (for 3 days in a row.
I really need some suggestions. We are trying to eat less beef, so don't have that.
Guess I can go with shrimp or chicken since that's what I have on hand.
Any suggestions or recipes?

Just be sure to cut the sweet potatoes super thin, I use a mandolin, or they may not soften enough

Here are not so many links, but some great ways to use sweet potatoes. If you just do a search for sweet potato stew or soup; there are tons of recipes, using all different meats

Sweet potato cakes topped with blackened or spicy shrimp; the shrimp can also be in a creamy cajun type of sauce
You can also add ham to sweet potato cakes

Sweet potato stews, there are a ton on here using beef, chicken, pork, and seafood

Sweet potato soups, another long list of lots from creamy to chunky, some vegetarian, some not

Sweet potato has is a great way to incorporate ham, chicken, or shrimp.

Sweet potato is great pureed, but NOT sweet, savory is fantastic used as a bed to serve a maple glazed salmon

Sweet potato pie; also sweet potatoes used as a topping for Shepherds Pie.

Sweet potato and black bean tacos are fantastic or quesadillas

You don't have to make the salsa, but I did; I cut the apples much smaller, but it was delicious
You could a variety of fish

Another easy dish is to saute bacon that is diced; then add sweet potatoes, onion, garlic and apples you want everything diced fine.. Stuff inside a chicken breast with a pocket cut. Reduce apple cider, chicken broth and white wine. Drizzle over the top.

You can also use that same base and add to stuffing cubes. Makes a wonderful stuffing for a whole chicken

Thanks EVERYONE ! I have saved this whole list.....every recipe looks so good.
I am going to have to buy lots of sweet potatoes in the near future. Wish I didn't live in the desert and could grow my own.
